- Pulled Pork:
- 1 five-pound bone-in (or out, your choice) pork butt (shoulder)
- 2-3 cloves of garlic
- 3 chipotles in adobo sauce
- 2 tablespoons yellow mustard
- 2 tablespoons pure maple syrup
- 1 tablespoon Red Boat Fish Sauce (paleo-approved)
- 1 teaspoon sea salt
- Grilled Pineapple Salsa:
- 1/2 pineapple, cut in 1/4-inch slices
- 2 jalapeños, seeded and diced
- 1 mango, peeled, cored, and small diced
- juice of 1 lime
- 1/4 cup diced red onion
- handful of cilantro, stems removed (about 1/2 cup)
- 2 garlic cloves, minced
- Grain-Free Soft Tacos (yields 6, 6-inch tortillas)
- 1 cup cassava flour (plus a little more on-hand for adjustments)
- 1/2 cup arrowroot flour
- 1/2 teaspoon fine sea salt
- 2 tablespoons melted ghee or organic butter
- 1/2 cup warm water (plus a little more on-hand for adjustments)
- Additional Garnishes:
- lime quarters, jalapeno slices, thinly-sliced radishes
