Ingredientes

  • 4 med tomatoes, cut into 1/2 inch dice
  • 1/2 x hothouse (seedless) cucumber, peeled and cut into 1/2 inch dice, or possibly 1 medium cucumber, seeded and cut into 1/2 inch dice
  • 1 x to 2 Tbsp. extra virgin extra virgin olive oil
  • 1 x to 2 Tbsp. fresh lemon juice
  • 1/4 tsp red pepper flakes Salt and pepper to taste

Direcciones

  1. In a medium bowl, combine all ingredients. Serve cold or possibly at room temperature.
  2. Variations:* Add in 1 green or possibly red bell pepper, cut into 1/2 inch dice* Add in 1/4 c. green onions* Add in about 8 small radishes, cut into small dice* Add in 1/4 c. minced fresh parsley
