:%3C/p%3E%3Cp%3EBlack%20pepper.%3C/p%3E%3Cp%3ETo%20garnish:%3C/p%3E%3Cp%3E8%20thin%20peach%20crescents;%3C/p%3E%3Cp%3EThyme%20leaves.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ELet%E2%80%99s%20start%20by%20doing%20the%20pasta.%20Mix%20together%20the%20flour,%20salt%20and%20the%20egg%20till%20it%20comes%20together%20in%20a%20ball%20of%20dough.%20Knead%20the%20dough%20for%20a%20good%2030%20minutes%20adding%20more%20flour%20or%20water%20if%20needed%20along%20the%20way%20if%20the%20dough%20seems%20to%20you%20either%20too%20wet%20or%20too%20dry;%20keep%20in%20mind%20though%20that%20the%20dough%20may%20absorb%20the%20excess%20moisture%20while%20kneading.%20At%20the%20end%20you%20should%20have%20a%20silky%20smooth%20ball%20of%20pasta%20dough;%20wrap%20it%20in%20Clingfilm%20and%20let%20rest%20in%20the%20fridge%20for%20a%20few%20hours.%3C/p%3E%3Cp%3EFor%20the%20meat%20filling;%20warm%20up%20in%20a%20saucepan%20the%20canola%20oil,%20add%20then%20the%20minced%20meat%20and%20brown%20it%20nicely.%20When%20all%20the%20excess%20moisture%20will%20be%20evaporated,%20add%20the%20minced%20shallots%20and%20sweat%20them%20till%20translucent.%20Add%20now%20the%20baking%20soda%20and%20half%20of%20the%20thyme%20leaves;%20let%20it%20cook%20for%20another%2010-15%20minutes%20over%20medium%20fire.%20Deglaze%20the%20saucepan%20with%20the%20white%20wine%20and%20let%20it%20evaporate%20completely.%20In%20the%20meantime%20lightly%20toast%20the%20cumin%20seeds%20until%20fragrant%20and%20pulverize%20them%20with%20the%20black%20peppercorns%20in%20a%20mortar.%20The%20meat%20mixture%20should%20be%20ready%20by%20now,%20take%20it%20out%20of%20the%20fire%20and%20let%20it%20cool%20slightly%20before%20mixing%20in%20the%20spices;%20season%20it%20with%20salt%20and%20set%20aside%20to%20come%20to%20room%20temperature,%20covered.%3C/p%3E%3Cp%3EWhen%20the%20meat%20mixture%20will%20have%20cooled%20down,%20place%20it%20in%20the%20bowl%20of%20a%20little%20mixer%20with%20the%20egg%20white%20and%20half%20of%20the%20cream.%20Mix%20till%20smooth%20adding%20the%20rest%20of%20the%20cream%20a%20little%20at%20a%20time.%20Check%20for%20seasoning%20and%20fold%20in%20the%20remaining%20thyme%20leaves;%20refrigerate%20till%20ready%20to%20use%20it.%3C/p%3E%3Cp%3ERoll%20the%20pasta%20dough%20using%20your%20pasta%20machine%20or%20your%20loyal%20rolling%20pin%20till%20very%20thin;%20cut%208%20squares%20of%20roughly%2013cm%20x%2013cm%20(5%E2%80%9Dx5%E2%80%9D)%20setting%20them%20aside%20over%20a%20clean%20dish%20towel%20sprinkled%20with%20some%20semolina%20or%20cornmeal.%20Divide%20the%20farce%20in%20four%20portions%20and%20place%20it%20over%20the%20center%20of%20four%20squares%20of%20pasta,%20dot%20now%20the%20farce%20center%20with%20the%20dates%20and%20candied%20orange%20peel%20uniformly.%20Brush%20the%20free%20pasta%20frame%20around%20the%20farce%20as%20well%20as%20the%20remaining%204%20squares%20with%20some%20egg%20white%20and%20close%20the%20ravioli%20paying%20attention%20to%20not%20leave%20any%20air%20pockets%20inside%20them.%20If%20you%20want%20you%20can%20use%20a%20fork%20to%20make%20decorative%20patterns%20all%20around%20the%20ravioli%20frame.%3C/p%3E%3Cp%3EBefore%20cooking%20the%20pasta,%20prepare%20the%20cranberry%20butter%20sauce.%20Rehydrate%20the%20dried%20cranberries%20for%2010%20minutes%20in%20enough%20hot%20water%20to%20cover%20them.%20Melt%20the%20butter%20with%20the%20sage%20leaves.%20When%20it%20will%20start%20to%20brown%20and%20smell%20nutty%20remove%20the%20whole%20sage%20leaves%20keeping%20them%20warm%20on%20a%20plate.%20Add%20the%20cranberries%20with%20all%20the%20leftover%20water%20to%20the%20hazelnut%20butter%20and%20let%20the%20sauce%20reduce%20till%20all%20the%20water%20will%20be%20evaporated.%20Season%20with%20lemon%20juice%20and%20pepper,%20keep%20warm.%3C/p%3E%3Cp%3ETo%20cook%20the%20pasta,%20fill%20up%20a%20large%20saucepan%20with%20salted%20water%20and%20bring%20to%20a%20boil.%20Using%20a%20spatula%20lower%20the%20ravioli%20one%20by%20one%20into%20the%20water%20letting%20them%20cook%20for%205min.%20Lift%20them%20out%20with%20a%20slotted%20spatula%20and%20place%20them%20on%20warm%20plates%20drizzling%20the%20sauce%20and%20the%20cranberries%20all%20over%20them.%3C/p%3E%3Cp%3EGarnish%20the%20dish%20with%202%20crescents%20of%20sweet%20peach,%20few%20thyme%20leaves%20and%20the%20crunchy%20fried%20sage%20leaves.%3C/p%3E%3Cp%3EI%20really%20quite%20enjoyed%20this%20dish.%20The%20aromatic%20earthy%20filling%20of%20the%20ravioli%20is%20punctuated%20by%20the%20sweet%20notes%20of%20date%20and%20orange%20peel%20while%20a%20cumin%20aroma%20lingers%20in%20the%20background.%20The%20smoothness%20of%20the%20farce%20is%20underlined%20by%20the%20slight%20bite%20of%20the%20pasta%20dough.%20The%20butter%20sauce%20brings%20richness%20to%20the%20dish%20with%20a%20warm%20nuttiness%20and%20sage%20aroma;%20the%20sweet-sour%20cranberries%20lift%20the%20fatty%20notes.%20The%20aromatic%20thyme%20leaves%20and%20peach%20crescents%20provide%20fresh%20juices%20and%20aromas%20that%20cl
