,%20I'm%20certain%20that%20I'd%20have%20them%20all%20devoured%20by%20now,%20which%20is%20just%20about%2024%20hrs.%20to%20the%20second%20after%20the%20last%20chocolate%20cupcake%20was%20gluttonously%20smothered%20in%20glorious%20peanut%20butter%20frosting.%3C/p%3E%3Cp%3EIna%20Garten%20doesn't%20kid%20around%20in%20the%20kitchen.%20We%20all%20know%20that%20by%20now.%20She%20certainly%20does%20not%20kid%20around%20with%20her%20chocolate%20recipes,%20and%20these%20cupcakes%20are%20living...well,%20not%20exactly,%20proof%20that%20she%20does%20chocolate%20right.%20Her%20chocolate%20cupcakes%20are%20the%20lightest%20airiest%20chocolate%20cuppies%20that've%20come%20from%20my%20kitchen.%20They%20also%20are%20probably%20the%20most%20expensive%20chocolate%20cuppies%20to%20come%20out%20of%20my%20kitchen.%20She%20adds%20all%20the%20works:%20brown%20sugar,%20sour%20cream,%20coffee..you%20know,%20the%20goooood%20stuff.%20And%20baby,%20it%20is%20good.%20Now,%20did%20I%20mention%20the%20glorious%20peanut%20butter%20frosting?%3C/p%3E%3Cp%3EChocolate%20Cupcakes%20with%20Peanut%20Butter%20Frosting%3C/p%3E%3Cp%3EBy%20Ina%20Garten,%20from%20Barefoot%20Contessa%20at%20Home%3C/p%3E%3Cp%3EIna%20says%20this%20yields%2014-15%20but%20mine%20made%2020%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%20Line%20cupcake%20pans%20with%20paper%20liners.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20a%20paddle%20attachment,%20cream%20the%20butter%20and%202%20sugars%20on%20high%20speed%20until%20light%20and%20fluffy,%20approximately%205%20minutes.%20Lower%20the%20speed%20to%20medium,%20add%20the%20eggs%201%20at%20a%20time,%20then%20add%20the%20vanilla%20and%20mix%20well.%20In%20a%20separate%20bowl,%20whisk%20together%20the%20buttermilk,%20sour%20cream,%20and%20coffee.%3C/p%3E%3Cp%3EIn%20another%20bowl,%20sift%20together%20the%20flour,%20cocoa,%20baking%20soda,%20and%20salt.%20On%20low%20speed,%20add%20the%20buttermilk%20mixture%20and%20the%20flour%20mixture%20alternately%20in%20thirds%20to%20the%20mixer%20bowl,%20beginning%20with%20the%20buttermilk%20mixture%20and%20ending%20with%20the%20flour%20mixture.%20Mix%20only%20until%20blended.%20Fold%20the%20batter%20with%20a%20rubber%20spatula%20to%20be%20sure%20it's%20completely%20blended.%3C/p%3E%3Cp%3EDivide%20the%20batter%20among%20the%20cupcake%20pans%20(1%20rounded%20standard%20ice%20cream%20scoop%20per%20cup%20is%20the%20right%20amount)%20or%202/3%20full.%20Bake%20in%20the%20middle%20of%20the%20oven%20for%2020%20to%2025%20minutes,%20until%20a%20toothpick%20comes%20out%20clean.%20Cool%20for%2010%20minutes,%20remove%20from%20the%20pans,%20and%20allow%20to%20cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3EFrost%20each%20cupcake%20with%20Peanut%20Butter%20Icing%20and%20sprinkle%20with%20chopped%20peanuts,%20if%20desired.%3C/p%3E%3Cp%3EKathleen's%20Peanut%20Butter%20Icing:%3C/p%3E%3Cp%3E1%20cup%20confectioners'%20sugar%3C/p%3E%3Cp%3E1%20cup%20creamy%20peanut%20butter%3C/p%3E%3Cp%3E5%20tablespoons%20unsalted%20butter,%20at%20room%20temperature%3C/p%3E%3Cp%3E3/4%20teaspoon%20pure%20vanilla%20extract%3C/p%3E%3Cp%3E1/4%20teaspoon%20kosher%20salt%3C/p%3E%3Cp%3E1/3%20cup%20heavy%20cream%3C/p%3E%3Cp%3EPlace%20the%20confectioners'%20sugar,%20peanut%20butter,%20butter,%20vanilla,%20and%20salt%20in%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20a%20paddle%20attachment.%20Mix%20on%20medium-low%20speed%20until%20creamy,%20scraping%20down%20the%20bowl%20with%20a%20rubber%20spatula%20as%20you%20work.%20Add%20the%20cream%20and%20beat%20on%20high%20speed%20until%20the%20mixture%20is%20light%20and%20smooth.%3C/p%3E){kind=link}
