%20his%20crumb%20cake.%20A%20special%20order%20was%20sold%20by%20accident%20and%20he%20had%20to%20'whip'%20one%20up.%20How%20he%20made%20those%20crumbs%20on%20his%20cake%20HUGE.....they%20looked%20so%20good....so%20I've%20stalking%20the%20internet%20for%20crumb%20cake%20recipes.%20Buddy%20from%20Cake%20Boss%20said%20his%20dad%20got%20his%20'secret%20crumb%20cake'%20when%20he%20first%20bought%20the%20bakery.%20How%20lucky%20is%20that....no%20only%20buying%20a%20bakery%20space%20but%20getting%20their%20recipes%20too?%20Apparently%20New%20York%20Crumb%20Cake%20is%20famous...here%20is%20my%20first%20attempt%20with%20a%20crumb%20cake.%20I%20found%20on%20Vanilla%20Sugar.%20She%20made%20it%20with%20Raspberry%20with%20lemon%20crumbles.%20I%20made%20it%20with%20Blackberries%20and%20I%20did%20not%20like%20the%20lemon%20crumbles.%20I%20don't%20know%20why....but%20I%20normally%20LOVE%20lemon.%3C/p%3E%3Cp%3EI%20made%20it%20again%20with%20Blueberries%20with%20no%20lemon....much%20better.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F%3C/p%3E%3Cp%3EMake%20crumb%20topping%20by%20melting%20the%20butter,%20letting%20it%20cool.%20In%20a%20bowl%20mix%20the%20flour,%20brown%20sugar,%20salt%20and%20add%20the%20cooled%20butter%20to%20it%20and%20stir%20well.%20Set%20aside%20till%20ready.%20Butter%20and%20flour%20a%2010%22%20round%20springform%20pan.%3C/p%3E%3Cp%3EIn%20small%20bowl,%20sift%20together%20the%20flour,%20baking%20powder,%20baking%20soda,%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20(with%20mixer%20or%20by%20hand)%20the%20butter,%20sugar%20until%20pale%20yellow%20and%20fluffy;%20add%20the%20zest,%20eggs,%20and%20beat%20well%20for%20an%20additional%202-3%20minutes.%3C/p%3E%3Cp%3EIn%20batches,%20add%20the%20flour,%20alternating%20with%20the%20buttermilk%20until%20all%20is%20combined.%3C/p%3E%3Cp%3EPour%201/2%20the%20batter%20into%20the%20baking%20pan%20and%20use%20a%20spatula%20to%20smooth.%20Top%20batter%20with%201/2%20the%20berries.%20Top%20with%20remaining%20batter%20and%20rest%20of%20berries.%20Push%20the%20berries%20only%20half%20way%20into%20batter.%3C/p%3E%3Cp%3EUsing%20your%20hands,%20grab%20and%20squeeze%20crumb%20mixture%20putting%20large%20chunks%20on%20top%20of%20batter.%20Make%20smaller%20clumps%20of%20crumb%20mixture%20and%20filling%20between%20the%20large%20clumps.%20Sprinkle%20the%20remaining%20crumb%20mixture%20evenly%20into%20between%20the%20large%20and%20medium%20'crumbs'.%3C/p%3E%3Cp%3EBake%20for%20approximately%2030%20-%2035%20minutes,%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20middle%20comes%20out%20clean%20and%20the%20top%20is%20golden%20brown.%20(I%20suggest%20using%20foil%20to%20cover%20your%20crumb%20cake%20to%20keep%20it%20from%20over%20browning%20like%20my%20first%20attempt%20did.)%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool%20in%20pan%20for%2010-15%20minutes,%20before%20releasing%20the%20sides%20of%20the%20spring%20form%20and%20sliding%20off%20bottom%20to%20transfer%20to%20a%20cooling%20rack%20(with%20the%20berry/sugar%20side%20up).%3C/p%3E%3Cp%3ELet%20cool%20completely%20before%20serving.%3C/p%3E%3Cp%3EThese%20crumbs%20were%20great.%20I've%20had%20some%20crummy%20crumb%20cake%20where%20the%20crumb%20topping%20just%20melted%20all%20over%20the%20top.%20These%20crumbs%20were%20big%20and%20they%20kept%20their%20shape.%3C/p%3E%3Cp%3EI%20have%20another%20crumb%20cake%20recipe%20that%20I%20found%20and%20I%20will%20do%20a%20compare%20and%20contrast%20soon.%20Perhaps%20no%20berries,%20just%20plain%20this%20time.%3C/p%3E%3Cp%3EGot%20milk?%3C/p%3E){kind=link}
