%3C/p%3E%3Cp%3EOnce%20I%20got%20home%20with%20the%20pineapple,%20I%20cut%20it%20into%20slices,%20grated%20and%20drained%20most%20of%20the%20juice%20away%20(it%20went%20into%20my%20stomach!).%20According%20to%20my%20family%20recipe,%20the%20pineapples%20are%20to%20be%20cooked%20with%20just%20some%20rock%20sugar%20and%20caster%20sugar.%20Most%20recipes%20I%20came%20across%20would%20recommend%20cooking%20it%20with%20cinnamon.%20I%20doubt%20my%20children%20would%20like%20the%20flavour%20so%20I%20stick%20to%20just%20sugar.%20However,%20in%20order%20to%20give%20the%20jam%20a%20nice%20golden%20hue,%20I%20used%20a%20mixture%20of%20brown%20and%20white%20sugar.%20If%20only%20white%20sugar%20is%20used,%20the%20colour%20would%20be%20too%20light,%20giving%20the%20impression%20that%20the%20jam%20is%20sour.%20To%20my%20great%20surprise,%20cooking%20the%20jam%20was%20not%20that%20tedious%20after%20all!%20Maybe%20it%20was%20because%20of%20the%20small%20quantity,%20I%20spent%20only%20about%2045mins%20to%20cook%20the%20jam%20before%20it%20dried%20up%20and%20became%20sticky.%3C/p%3E%3Cp%3EThese%20golden%20gems%20are%20truly%20labour%20of%20love!%3C/p%3E%3Cp%3EAfter%20my%20successful%20attempt%20at%20making%20my%20first%20batch%20of%20jam,%20I%20bought%20another%20two%20pineapples%20to%20make%20another%20batch.%20This%20time%20I%20really%20did%20it%20from%20scratch!%20No%20more%20cheating%20by%20using%20ready-cut%20fruits.%20I%20spent%20quite%20sometime%20trying%20to%20slice%20away%20the%20numerous%20eyes%20on%20the%20pineapples.%20Then%20it%20was%20another%20daunting%20task%20grating%20the%20pineapples.%20In%20the%20process,%20I%20grated%20not%20just%20the%20pineapples%20but%20also%20my%20fingers%20too!%3C/p%3E%3Cp%3EI%20made%20tangerine-style%20pineapple%20tarts%20(my%20favourite!)%20and%20also%20tried%20shaping%20them%20into%20pillows.%20I%20wasn't%20quite%20sure%20how%20to%20go%20about%20it,%20so%20I%20simply%20rolled%20them%20in%20between%20my%20hands.%20The%20resulting%20tarts%20look%20more%20like%20cocoon%20than%20pillows!%20I%20then%20realised%20it%20was%20due%20to%20the%20shape%20of%20my%20palms%20and%20fingers.%20So%20I%20tried%20rolling%20it%20on%20my%20table%20and%20it%20worked!%20I%20went%20back%20to%20the%20same%20pineapple%20tart%20recipe%20but%20this%20time,%20I%20added%20in%2030g%20of%20icing%20sugar.%20The%20original%20recipe%20has%20got%20no%20sugar%20in%20it,%20and%20I%20had%20a%20hard%20time%20judging%20whether%20the%20tarts%20were%20done.%20The%20pastry%20just%20wouldn't%20brown%20and%20I%20kept%20extending%20the%20baking%20time%20as%20I%20thought%20my%20unreliable%20oven%20was%20playing%20tricks%20on%20me%20again.%20Well,%20even%20with%20this%20extra%20sugar,%20the%20tarts%20didn't%20brown%20that%20much%20either%20:(%3C/p%3E%3Cp%3EFeeling%20a%20bit%20more%20adventurous%20after%20having%20gained%20the%20confidence%20of%20making%20homemade%20pineapple%20jam,%20I%20ventured%20into%20something%20even%20more%20challenging...%3C/p%3E%3Cp%3E...making%20Nastar%20rolls.%20With%20a%20cookie%20press,%20the%20dough%20is%20piped%20into%20a%20strip%20before%20wrapping%20it%20with%20the%20pineapple%20filling.%20I%20tried%20piping%20the%20dough%20on%20the%20table%20but%20the%20strip%20kept%20breaking.%20Fortunately%20I%20found%20a%20way%20that%20worked%20well%20for%20me...I%20piped%20the%20strip%20of%20dough%20directly%20onto%20my%20palm,%20place%20a%20pre-rolled%20pineapple%20gem%20on%20it%20and%20roll%20it%20over.%20I%20don't%20know%20whether%20it%20is%20the%20cookie%20press%20or%20the%20dough,%20the%20resulting%20nastar%20rolls%20look%20like%20sotong%20(squid)!!%3C/p%3E%3Cp%3EThe%20pastry%20was%20so%20fragile%20that%20I%20gave%20up%20glazing%20the%20rolls%20with%20egg%20wash.%20Even%20though%20these%20nastar%20rolls%20are%20not%20quite%20close%20to%20what%20they%20should%20be,%20it%20was%20certainly%20a%20good%20experience%20shaping%20them.%3C/p%3E%3Cp%3EOnce%20you%20sink%20your%20teeth%20into%20one%20of%20these%20golden%20morsels,%20the%20buttery%20pastry%20will%20crumble%20away%20in%20your%20mouth%20before%20hitting%20the%20soft,%20moist%20and%20delicious%20pineapple%20filling.%20They%20are%20so%20delicious%20that%20I%20have%20to%20keep%20a%20close%20guard%20on%20them%20otherwise%20they%20would%20be%20all%20gone%20before%20the%20new%20year%20eve!%3C/p%3E%3Cp%3ENote:%3C/p%3E%3Cp%3E*%20Hop%20over%20here%20for%20the%20tart%20pastry%20recipe.%20I%20added%2030g%20icing%20sugar%20for%20this%20latest%20batch.%3C/p%3E%3Cp%3E*%20Pineapple%20jam%20-%20I%20cooked%202%20pineapples%20(grated%20and%20drained)%20with%20150g%20brown%20sugar%20and%20150g%20caster%20sugar%20(adjust%20sugar%20amount%20according%20to%20taste%20and%20sweetness%20of%20the%20pineapples).%20Add%20sugar%20only%20when%20most%20of%20the%20moisture%20has%20evaporated.%20Once%20sugar%20is%20added,%20keep%20stiring%20constantly%20to%20prevent%20burning.%20It%20takes%20about%2030-45%20mins%20on%20medium%20to%20low%20heat%20before%20the%20jam%20becomes%20dry%20and%20sticky.%20Leave%20to%20cool%20before%20storing%20in%20fridge.%20Roll%20into%20small%20balls.%3C/p%3E%3Cp%3E*%20For%20closed%20type%20of%20tarts,%20I%20use%20half%20a%20tablespoon%20of%20pastry%20dough%20and%201%20teaspoon%20of%20pineapple%20jam.%20Watch%20this%20video%20to%20learn%20the%20method%20to%20wrap%20the%20tarts.%3C/p%3E%3Cp%3E*%20If%20the%20jam%20is%20too%20soft%20(under%20cooked),%20it%20will%20be%20difficult%20to%20wrap.%20To%20overcome%20this%20problem,%20freeze%20the%20rolled%20jam%20balls%20in%20the%20freezer%20for%20about%2030mins%20(or%20longer)%20before%20wrapping.%3C/p%3E){kind=link}
