Italian Oven Roasted Potatoes

Ingredientes

  • 2 med baking potatoes
  • 1 med green pepper
  • 1 med red pepper
  • 4 Tbsp. extra virgin olive oil
  • 2 tsp minced fresh rosemary
  • 1 tsp chopped fresh garlic
  • 1/2 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 4 tsp minced fresh parsley
  • 1/2 c. grated Romano cheese

Direcciones

  1. Preheat oven to 350 degrees.
  2. Peel potatoes and dice into 1/2-inch pcs. Core and seed peppers and dice into 1/2-inch pcs. Set aside.
  3. Mix extra virgin olive oil, rosemary, garlic, salt and pepper in a bowl. In a small baking pan, toss potatoes and peppers with the oil and herb mix. Bake for 10 min or possibly till potatoes are fork tender. Sprinkle potatoes with parsley and Romano.
