Receta Italian Oven Roasted Potatoes

Ingredientes
- 2 med baking potatoes
- 1 med green pepper
- 1 med red pepper
- 4 Tbsp. extra virgin olive oil
- 2 tsp minced fresh rosemary
- 1 tsp chopped fresh garlic
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 4 tsp minced fresh parsley
- 1/2 c. grated Romano cheese
Direcciones
- Preheat oven to 350 degrees.
- Peel potatoes and dice into 1/2-inch pcs. Core and seed peppers and dice into 1/2-inch pcs. Set aside.
- Mix extra virgin olive oil, rosemary, garlic, salt and pepper in a bowl. In a small baking pan, toss potatoes and peppers with the oil and herb mix. Bake for 10 min or possibly till potatoes are fork tender. Sprinkle potatoes with parsley and Romano.
