Ingredientes

  • 1 tsp Extra virgin olive oil
  • 1 1/2 c. Onion, minced
  • 2 x Cloves garlic, crushed
  • 2 1/2 c. Sweet yellow peppers, minced
  • 1 Tbsp. Grnd cumin
  • 1 Tbsp. Warm Hungarian paprika
  • 1 Tbsp. Chili pwdr
  • 2 tsp Sugar
  • 1/2 tsp Salt
  • 1/4 tsp Grnd cloves
  • 2 can Stewed tomatoes, undrained
  • 1 can Kidney beans, liquid removed
  • 1 can Cannellini beans, liquid removed
  • 1 can Black beans, liquid removed
  • 1 c. Water
  • 2 Tbsp. Tomato paste
  • 2 Tbsp. Balsamic vinegar
  • 6 Tbsp. Fresh cilantro, chopped

Direcciones

  1. Coat a Dutch oven with vegetable cooking spray; add in extra virgin olive oil. Place over medium-high heat till warm. Add in onion and garlic; saute/fry till onion is tender. Add in yellow pepper; saute/fry till pepper is tender. Add in cumin and next 5 ingredients; saute/fry 1 minute.
  2. Stir in tomatoes and next 5 ingredients; bring to a boil. Cover, reduce heat, and simmer 20 min.
  3. Remove from heat; stir in vinegar. Ladle chili into individual bowls. Top each serving with 1 Tbsp. cilantro.
