Ingredientes

  • 1 lb 16-20 peeled and deveined shrimp
  • 2 c. cooked black beans
  • 1 x red, 1 yellow onion orange juice
  • 1/2 c. fresh thyme
  • 2 whl bunches of green onions
  • 1/4 c. minced - peeled ginger
  • 3 x jalapenos - whole minced with seeds
  • 1/3 c. peanut oil
  • 10 clv garlic
  • 3 x grnd bay leaves
  • 2 tsp allspice
  • 1 tsp nutmeg
  • 1 Tbsp. grnd black pepper
  • 1 Tbsp. coriander - grnd
  • 1 tsp cinnamon
  • 2 tsp salt
  • 1 x juice lime

Direcciones

  1. Combine all ingredients in a blender and make into a loose paste.
  2. Marinate the 16/20 shrimp in the mix for at least a half hour.
  3. To Prepare The Kabobs:Soak, the skewers in water prior to assembling the kabobs. Cut up a red onion and a red bell pepper into 1/2 inch squares. Skewer 1 shrimp the a piece of red onion followed by a piece of red bell pepper, then another shrimp and then repeat so which there are 3 shrimp on a skewer.
  4. Cured Onions:Thinly slice 1 red onion and 1 yellow onion into half circles. Place in bowl cover with orange juice and add in 2 tsp salt and 2 tbsp sugar.
  5. Let sit for at least an hour.
  6. To Plate:Season and grill kabobs until done - about 5-6 min. Place rice and black beans in center of plate and top with grilled kabobs. Top with cured onions and drizzle some of the onion orange juice around plate.
  7. Garnish with lemon and parsley.
