Ingredientes

  • 1/2 head cauliflower, cut in florets
  • 3 lrg carrots, cut in 2" strips
  • 3 x ribs celery, 1" pcs
  • 1 can baby corn
  • 1 x green bell pepper, cut in strips
  • 1 can button mushrooms, drain (8 ounce.)
  • 3/4 c. white wine vinegar
  • 1/2 c. extra virgin olive oil
  • 2 Tbsp. sugar
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • 1 can pimento liquid removed, (4 ounce.)
  • 1 can pitted black olives, drain (#303 can)
  • 1 jar green pimento olives, drain
  • 1 can artichoke hearts, cut in quarters
  • 1/4 c. water
  • 1 bot low-calorie Italian dressing

Direcciones

  1. Mix ingredients (except Italian dressing) together in Dutch oven: cover.
  2. Bring to a boil. Reduce heat; simmer for 5 min. Cold quickly. Add in the low-calorie Italian dressing. Chill (covered) 24 hrs before serving. Keeps for 4-6 weeks in refrigerator (covered).
