%20and%20lots%20of%20snow%20it's%20been%20a%20bit%20frigid.%20Due%20to%20this%20we%20ate%20in%20a%20lot%20more%20than%20usual%20but%20this%20month%20I%20really%20made%20a%20lot%20of%20new%20meals%20and%20meals%20I%20don't%20blog%20(pasta%20with%20jarred%20sauce,%20frozen%20Trader%20Joe's%20stuff...%20you%20get%20the%20picture...).%20Like%20always%20there%20were%20some%20favorites%20remade,%20so%20let's%20get%20to%20it.%3C/p%3E%3Cp%3EI%20started%20the%20month%20off%20with%20this%20cheesy%20baked%20onion%20dip.%20If%20I'm%20being%20honest%20this%20was%20technically%20made%20on%20December%2031%20but%20I%20had%20already%20posted%20my%20recap%20so%20it%20got%20bumped%20to%20January.%20I%20made%20this%20for%20a%20few%20friends%20that%20came%20over%20for%20NYE%20and%20it%20was%20delicious.%20I'm%20very%20sensitive%20to%20onions%20and%20still%20cry%20every%20time%20I%20chop%20them%20so%20it%20was%20cute%20to%20hear%20Landon%20asking,%20%22Mommy,%20you%20sad?%20Why%20cry?%20You%20hurt?%22%20I%20love%20that%20bugger.%20And%20cheesy%20onion%20dip.%20Yup..%20I%20love%20both.%3C/p%3E%3Cp%3EEvery%20January%20at%20my%20school%20we%20do%20a%20cultural%20fair%20project%20where%20each%20grade%20level%20studies%20a%20continent.%20Fifth%20grade%20works%20on%20Asia%20and%20my%20class%20specifically%20focuses%20on%20Thailand.%20I%20decided%20to%20make%20a%20rendition%20of%20this%20pineapple%20fried%20rice.%20There%20were%20several%20changes%20(no%20chicken,%20added%20raisins,%20added%20curry%20powder,%20teriyaki%20sauce,%20and%20sriracha%20sauce)%20but%20I%20used%20this%20as%20my%20inspiration%20and%20base.%20My%20kids%20loved%20it...%20and%20let%20me%20tell%20you,%20those%20kids%20can%20pound%20sriracha!%20I%20used%20so%20little%20but%20they%20all%20wanted%20more%20and%20more%20to%20the%20point%20where%20their%20food%20was%20red!%20My%20tongue%20was%20burning%20just%20looking%20at%20their%20plates.%3C/p%3E%3Cp%3EChicken%20parmesan%20pasta%20continues%20to%20be%20one%20of%20my%20favorite%20go-to%20meals%20when%20I%20don't%20feel%20like%20cooking.%20I%20often%20sit%20at%20my%20laptop%20with%20one%20hand%20on%20my%20phone%20to%20call%20for%20take%20out%20and%20one%20hand%20looking%20through%20my%20blog%20for%20an%20easy%20meal,%20and%20without%20fail%20I%20fall%20to%20this.%20I%20always%20have%20the%20ingredients%20and%20it's%20always%20a%20meal%20that%20all%20three%20of%20us%20like!%3C/p%3E%3Cp%3EIt%20wouldn't%20be%20a%20monthly%20recap%20without%20pizza...%20you%20know%20we%20love%20our%20pizza%20in%20this%20house.%20This%20month%20I%20remade%20John's%20absolute%20favorite-%20buffalo%20chicken%20pizza.%20I%20don't%20love%20buffalo%20chicken%20pizza%20at%20restaurants%20because%20it's%20normally%20so%20gloppy,%20covered%20in%20fried%20chicken,%20and%20just%20usually%20makes%20me%20sick%20after%20eating%20it.%20I%20love%20this%20version%20though%20with%20grilled%20chicken%20and%20a%20lighter%20sauce%20(and%20less%20of%20it).%3C/p%3E%3Cp%3EI%20haven't%20made%20baked%20garlic%20rice%20pilaf%20in%20so%20long%20and%20it%20was%20time%20to%20bring%20it%20back!%20This%20recipe%20takes%20a%20good%20deal%20of%20time%20but%20it%20is%20so%20delicious%20and%20truly%20the%20oven%20does%20all%20the%20work.%20I%20needed%20a%20side%20dish%20to%20serve%20with%20my%20chicken%20florentine%20puffs%20that%20wouldn't%20steal%20the%20show%20but%20would%20compliment%20the%20dish%20and%20this%20rice%20was%20perfect.%20Truth%20be%20told%20I%20could%20eat%20a%20bowl%20of%20this%20with%20a%20salad%20and%20call%20it%20dinner.%3C/p%3E%3Cp%3ERemember%20that%20snow%20I%20mentioned%20earlier%20in%20the%20post?%20Recently%20we%20had%20a%20huge%20snow%20storm%20and%20I%20was%20home%20early%20from%20work%20and%20REALLY%20wanted%20a%20casserole.%20Like%20the%20%22bad%22%20kind%20full%20of%20creamy%20soups%20and%20cheese.%20I%20don't%20buy%20creamed%20canned%20soups%20often%20so%20I%20decided%20to%20make%20my%20condensed%20cream%20of%20chicken%20soup%20to%20use.%20Honestly%20why%20don't%20I%20make%20this%20more%20often?!%20It's%20so%20easy.%20Landon%20helped%20me%20stir%20it%20and%20helped%20me%20pour%20the%20flour%20mixture%20in...%20even%20with%20his%20%22help%22%20this%20still%20came%20together%20so%20quickly%20and%20it's%20much%20better%20for%20you%20than%20the%20canned%20stuff.%3C/p%3E%3Cp%3EOn%20Tuesday%20I%20posted%20about%20how%20I%20stink%20at%20following%20my%20meal%20plans%20and%20this%20dinner%20was%20another%20result%20of%20such%20a%20night%20where%20I%20just%20didn't%20feel%20like%20making%20what%20I%20planned.%20It's%20all%20good%20though%20because%20I%20ended%20up%20making%20this%20crispy%20cashew%20chicken%20stir%20fry%20which%20I%20had%20basically%20forgotten%20about.%20Man%20is%20this%20stuff%20good!%20I%20used%20a%20short%20cut%20and%20used%20a%20frozen%20teriyaki%20veggie%20mix%20for%20the%20veggies%20this%20time%20and%20I%20thought%20they%20worked%20perfectly.%20The%20sauce%20on%20them%20blended%20well%20with%20this%20sauce%20and%20it%20was%20all%20so%20very%20good.%20Even%20the%20leftovers%20were%20fabulous.%3C/p%3E%3Cp%3ELandon%20has%20been%20picky%20(surprise...)%20with%20his%20meals%20lately%20so%20I%20bought%20some%20sliced%20American%20cheese%20from%20the%20deli%20for%20nights%20where%20he%20really%20won't%20eat.%20On%20those%20nights%20I%20throw%20him%20a%20slice%20of%20cheese,%20a%20banana,%20and%20a%20smoothie%20and%20call%20it%20a%20day.%20I%20had%20some%20cheese%20left%20and%20used%20it%20for%20these%20cheesy%20garlic%20shells%20and%20they%20were%20just%20as%20good%20as%20the%20first%20time.%20Total%20comfort%20food.%3C/p%3E%3Cp%3EI%20was%20really%20craving%20pizza%20one%20night%20but%20wasn't%20in%20the%20mood%20for%20my%20typical%20favorites%20so%20I%20decided%20to%20bring%20back%20bruschetta%20pizza.%20It's%20just%20so%20good...%20it's%20so%20fresh%20tasting%20which%20is%20a%20nice%20contrast%20from%20the%20typical%20heavy%20flavors%20of%20winter.%20John%20and%20I%20loved%20it,%20as%20usual,%20and%20Landon%20refused%20to%20try%20it,%20as%20usual.%20However%20I%20anticipated%20this%20and%20made%20a%20section%20of%20the%20pie%20plain%20with%20just%20tomato%20sauce%20and%20cheese...%20and%20sure%20enough%20he%20ate%20that%20with%20no%20issue!%3C/p%3E%3Cp%3EI%20cooked%20with%20my%20class%20this%20month%20and%20they%20wanted%20to%20make%20a%20%22fancy%20dessert%22%20in%20their%20words.%20So%20here%20we%20go!%20We%20made%20a%20trifle%20using%20cookies%20on%20the%20base%20(recipe%20below),%20a%20pudding%20mousse%20on%20top,%20and%20covered%20it%20all%20with%20this%20warm%20strawberry%20sauce.%20My%20kids%20were%20amazed%20that%20it%20is%20made%20from%20simply%20just%20strawberries.%3C/p%3E%3Cp%3ELastly%20I%20made%20these%20soft%20eggless%20cookies%20because%20I%20have%20a%20child%20with%20an%20egg%20allergy%20and%20didn't%20want%20to%20leave%20him%20out.%20They%20LOVED%20them.%20I%20used%20chocolate%20chips%20instead%20of%20M&Ms%20because%20I%20have%20several%20nut%20allergies%20in%20my%20class,%20but%20otherwise%20they%20were%20the%20same.%3C/p%3E){kind=link}
