- DRAIN FRUIT COCKTAIL; RESERVE JUICE FOR USE IN STEP 4 AND FRUIT FOR USE IN STEP 6.
- Add in GELATIN TO BOILING WATER; STIR Till DISSOLVED.
- Add in Cool WATER, RESERVED JUICE AND LEMON JUICE; MIX WELL.
- POUR EQUAL AMOUNT GELATIN Mix INTO EACH PAN; RefrigerateTill SLIGHTLY THICKENED.
- Add in EQUAL AMOUNT FRUIT COCKTAIL AND NUTS TO GELATIN Mix IN EACH PAN; STIR TO DISTRIBUTE Proportionately.
- RefrigerateTill Hard. CUT 5 BY 7.
- PLACE 1 LETTUCE LEAF ON EACH SERVING DISH; Add in GELATIN SQUARE.
- COVER; Chill Till READY TO SERVE.
- ALL NOTES ARE PER 100 PORTIONS.

- IN STEP 1: 4 LB 8 Ounce LEMONS A.P. (18 LEMONS) WILL YIELD 3 C. JUICE. 4 LB 5 Ounce FRESH LETTUCE A.P. WILL YIELD 4 LB TRIMMED LETTUCE.
