%20is%20a%20thistle%20type%20flower%20of%20a%20plant,%20and%20the%20other%20is%20the%20tuberous%20root%20of%20a%20particular%20species%20of%20sunflower.%20Often%20called%20sunchokes%20or%20sun%20roots,%20and%20even%20earth%20apples,%20these%20are%20one%20of%20my%20favourite%20vegetables%20.%20.%20.%20cooked%20into%20beautifully%20rich%20winter%20soups,%20mashed%20and%20souffled,%20or%20layered%20in%20casseroles%20and%20gratins.%3C/p%3E%3Cp%3EThey%20do%20have%20one%20drawback%20though%20.%20.%20.%3C/p%3E%3Cp%3ENot%20to%20be%20indelicate,%20but%20.%20.%20.%20they%20can%20create%20a%20lot%20of%20.%20.%20.%20*ahem*%20.%20.%20.%20shall%20we%20say%20.%20.%20.%20wind%20.%20.%20.%20for%20some%20people%20who%20eat%20them%20.%20.%20.%3C/p%3E%3Cp%3EI%20do%20make%20a%20wonderfully%20delicious%20Jerusalem%20Artichoke%20and%20Lentil%20soup,%20which%20creates%20somewhat%20of%20a%20double%20dose%20of%20the%20.%20.%20.%20*ahem*%20.%20.%20.%20self%20same%20problem,%20but%20.%20.%20.%20is%20well%20worth%20the%20consequences%20of%20eating%20it,%20as%20it%20is%20soooo%20delicious!!!%3C/p%3E%3Cp%3EHere%20I've%20combined%20them%20with%20another%20of%20my%20favourite%20vegetables,%20parsnips%20.%20.%20.%20and%20created%20a%20delicious%20gratin%20.%20.%20.%20not%20to%20be%20missed!%3C/p%3E%3Cp%3EI%20think%20you%20will%20love%20this.%20It%20goes%20wonderfully%20with%20chicken%20or%20fish%20and%20even%20pork.%3C/p%3E%3Cp%3EOh%20heck%20.%20.%20.%20it%20goes%20wonderfully%20with%20anything,%20and%20even%20makes%20a%20delicious%20vegetarian%20main%20option,%20as%20long%20as%20you%20use%20a%20vegetarian%20cheese.%3C/p%3E%3Cp%3EEnjoy!%20We%20sure%20did!%20No%20matter%20the%20.%20.%20.%20ummm%20.%20.%20.%20consequences%20.%20.%20.%3C/p%3E%3Cp%3E*Jerusalem%20Artichoke%20and%20Parsnip%20Gratin*%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3ETwo%20of%20my%20favourite%20vegetables%20combined%20in%20a%20tasty%20Gratin.%20What%20more%20could%20you%20ask%20for?%3C/p%3E%3Cp%3EParboil%20the%20parsnips%20in%20lightly%20salted%20water%20for%20about%208%20minutes,%20then%20drain%20well%20and%20set%20aside.%20Do%20the%20same%20with%20the%20artichokes,%20cooking%20them%20for%20about%2015%20minutes.%20Drain%20well%20and%20then%20slice%20the%20same%20thickness%20as%20the%20parsnips.%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20200*C/400*F.%20Place%20the%20garlic%20into%20a%20saucepan%20along%20with%20the%20butter.%20Heat%20over%20low%20heat%20until%20the%20garlic%20becomes%20very%20fragrant%20and%20soft.%20Add%20the%20thyme,%20mustard%20and%20white%20wine.%20Heat%20gently%20and%20then%20whisk%202%20TBS%20of%20the%20gruyere%20cheese.%3C/p%3E%3Cp%3EButter%20a%20shallow%20gratin%20dish.%20Layer%20the%20blanched%20and%20sliced%20vegetables%20in%20the%20dish,%20seasoning%20with%20some%20salt%20and%20pepper.%20Pour%20the%20wine%20mixture%20over%20top%20and%20give%20the%20dish%20a%20bit%20of%20a%20shake%20to%20distribute%20it%20evenly.%20Drizzle%20the%20double%20cream%20over%20top.%20Cover%20tightly%20and%20bake%20for%2015%20minutes.%20Uncover%20and%20sprinkle%20the%20remaining%20TBS%20of%20gruyere%20on%20top%20and%20bake%20for%20an%20additional%2015%20minutes,%20uncovered%20or%20until%20the%20vegetables%20are%20completely%20tender%20and%20the%20dish%20has%20become%20golden%20brown%20on%20top.%3C/p%3E){kind=link}
