Ingredientes

  • 1 1/2 c. unsalted butter - (3 sticks)
  • 1 c. light-brown sugar - (packed)
  • 2 lrg Large eggs separated
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 2/3 c. sifted all-purpose flour
  • 2 c. finely-minced pecans
  • 1 c. thick raspberry jam

Direcciones

  1. Preheat oven to 350 degrees, and line baking sheets with parchment paper.
  2. Cream butter and sugar. Beat in egg yolks, vanilla, and salt, then the flour. Shape dough into 1-inch balls.
  3. Brush each dough ball with beaten egg whites, then roll in the minced pecans. Place balls 2 to 3 inches apart on baking sheets. Press the center of each ball with your thumb, and fill with 1/2 tsp. of jam.
  4. Bake till just golden brown around the edges, 8 to 10 min. Cold cookies on rack.
  5. This recipe yields about 5 dozen cookies.
