Ingredientes
- 1 1/2 c. unsalted butter - (3 sticks)
- 1 c. light-brown sugar - (packed)
- 2 lrg Large eggs separated
- 2 tsp vanilla extract
- 1/4 tsp salt
- 2 2/3 c. sifted all-purpose flour
- 2 c. finely-minced pecans
- 1 c. thick raspberry jam
Direcciones
- Preheat oven to 350 degrees, and line baking sheets with parchment paper.
- Cream butter and sugar. Beat in egg yolks, vanilla, and salt, then the flour. Shape dough into 1-inch balls.
- Brush each dough ball with beaten egg whites, then roll in the minced pecans. Place balls 2 to 3 inches apart on baking sheets. Press the center of each ball with your thumb, and fill with 1/2 tsp. of jam.
- Bake till just golden brown around the edges, 8 to 10 min. Cold cookies on rack.
- This recipe yields about 5 dozen cookies.
