Jewelled Vegetable Rice ( Ratan Pulao )

Ingredientes

  • 6 Tbsp. sunflower oil
  • 1 tsp cumin seeds
  • 4 x cm stick coriander
  • 8 x cloves
  • 16 x black peppercorns
  • 8 x cardamom
  • 4 x fresh green chillies minced finely
  • 150 gm carrot diced finely
  • 150 x ggreen peas
  • 90 gm French beans minced
  • 90 gm sweetconn
  • 90 gm mushnooms sliced
  • 300 gm bosmati rice washed and liquid removed
  • 2 Tbsp. raisins
  • 1 sht edible silver foil (optional) salt

Direcciones

  1. Heat the oil in a heavy pan and add in the cumin seeds.
  2. When they pop add in the whole spices.
  3. Stir a couple of times and add in the green chillies all the vegetables and salt.
  4. Stir fry for 23 min.
  5. Add in the rice and fry till translucent/soft.
  6. Add in 600ml of warm water mix gently and bring to the boil then lower heat cover and cook till all the vegetables are soft but still crisp.
  7. Sene warm garnished with raisins and edible silver foil.
  8. Serves 4
