%3C/p%3E%3Cp%3EI%20decided%20to%20find%20out%20what%20all%20the%20fuss%20was%20about.%20I%20mean,%20it's%20just%20beef%20stew,%20isn't%20it?%20My%20sister%20(the%20chef)%20assures%20me%20that%20it%20is%20not%20just%20beef%20stew....%20if%20it's%20made%20properly.%3C/p%3E%3Cp%3EI%20searched%20for%20Julia's%20recipe%20online,%20and%20found%20a%20version%20of%20it%20on%20Oprah.com.%20With%20only%20some%20minor%20modifications,%20here's%20what%20I%20came%20up%20with:%3C/p%3E%3Cp%3EBOEUF%20BOURGUIGNON%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450%20F.%20Take%20the%20head%20of%20garlic%20and%20slice%20off%20the%20top%20so%20that%20it%20exposes%20all%20the%20cloves.%20Set%20in%20tinfoil%20and%20pour%202%20tbsp.%20red%20wine%20over%20top.%20Wrap%20it%20up%20in%20the%20tinfoil%20and%20put%20in%20the%20oven%20for%2020-30%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20cook%20bacon%20pieces%20until%20lightly%20browned.%20Set%20bacon%20aside%20but%20keep%20the%20grease%20in%20the%20pot.%20Pat%20the%20pieces%20of%20beef%20with%20a%20paper%20towel%20(this%20is%20a%20key%20step!)%20and%20brown%20in%20the%20bacon%20grease%20on%20all%20sides.%20Do%20this%20in%20batches,%20and%20set%20the%20meat%20aside%20with%20the%20bacon.%20Add%20carrots%20and%20onions%20to%20the%20pot%20and%20saut%C3%A9%20for%20a%20few%20minutes.%20(I%20only%20had%20about%201%20tbsp.%20of%20bacon%20grease%20left%20by%20this%20point,%20but%20it%20was%20just%20enough%20to%20coat%20the%20veggies.)%3C/p%3E%3Cp%3EReturn%20beef%20and%20bacon%20to%20the%20pot%20and%20season%20with%20a%20little%20salt%20and%20pepper.%20Coat%20the%20meat%20with%20flour%20and%20then%20put%20the%20pot%20(uncovered)%20in%20the%20oven%20on%20the%20middle%20rack%20for%204%20minutes.%20Toss%20the%20meat%20some%20more%20and%20return%20to%20the%20oven%20for%20another%204%20minutes.%20Set%20the%20pot%20on%20the%20stove%20and%20reduce%20the%20oven%20to%20325%20F.%20(Leave%20your%20garlic%20in%20there%20if%20it's%20not%20done%20yet.)%3C/p%3E%3Cp%3EStir%20in%20wine%20and%20add%20enough%20broth%20to%20just%20barely%20cover%20the%20meat.%20Add%20tomato%20paste,%20garlic,%20and%20bay%20leaf.%20(To%20add%20the%20garlic,%20remove%20it%20from%20the%20tinfoil%20and%20turn%20it%20over%20so%20the%20cut-side%20is%20down.%20Mash%20it%20with%20a%20spoon%20until%20the%20garlic%20cloves%20slide%20out%20of%20their%20skins,%20and%20toss%20the%20garlic%20cloves%20into%20the%20pot.)%20Bring%20stew%20to%20a%20simmer,%20then%20cover%20the%20pot%20and%20place%20in%20the%20oven%20on%20the%20bottom%20rack.%20Cook%20for%202%201/2%20to%203%20hours.%3C/p%3E%3Cp%3EWhile%20stew%20is%20cooking,%20braise%20the%20pearl%20onions%20(I%20followed%20this%20method%20for%20brown-braised%20onions)%20and%20saut%C3%A9%20mushrooms%20in%20butter.%3C/p%3E%3Cp%3EWhen%20stew%20is%20ready,%20drain%20the%20liquid%20through%20a%20strainer%20overtop%20of%20a%20saucepan.%20Add%20onions%20and%20mushrooms%20to%20the%20beef%20and%20vegetables.%20Skim%20fat%20off%20the%20drippings%20in%20the%20saucepan%20and%20simmer%20for%20until%20sauce%20lightly%20coats%20the%20back%20of%20a%20wooden%20spoon.%20(There%20should%20be%20about%202%201/2%20c.%20sauce%20when%20it's%20done.%20The%20recipe%20says%20to%20simmer%20for%20a%20couple%20minutes,%20but%20I%20had%20mine%20going%20for%20at%20least%20half%20an%20hour%20before%20it%20thickened%20up%20nicely,%20and%20there%20was%20probably%20at%20least%203%20c.%20of%20sauce.)%20Pour%20over%20meat%20and%20vegetables%20and%20serve%20with%20crusty%20bread.%3C/p%3E%3Cp%3EI%20made%20this%20yesterday%20and%20saved%20it%20for%20supper%20tonight.%20It%20was%20delicious,%20and%20everyone%20enjoyed%20it.%20I%20would%20definitely%20make%20this%20again,%20although%20I'm%20not%20convinced%20that%20it%20needs%20to%20be%20quite%20so%20time-consuming....%20I'm%20pretty%20sure%20if%20you%20cooked%20the%20bacon,%20browned%20the%20beef,%20and%20then%20tossed%20everything%20in%20the%20slow%20cooker%20you'd%20be%20good%20to%20go.%20I%20liked%20thickening%20the%20sauce%20afterwards,%20just%20to%20make%20it%20richer%20and%20heartier,%20and%20I%20loved%20roasting%20the%20whole%20head%20of%20garlic%20in%20red%20wine.%20But%20this%20business%20of%20cooking%20the%20mushrooms%20and%20pearl%20onions%20separately,%20and%20browning%20the%20beef%20in%20the%20oven%20for%208%20minutes%20before%20adding%20the%20liquid,%20well,%20I'm%20not%20sure%20it's%20necessary.%20(Julia%20Child%20is%20probably%20rolling%20over%20in%20her%20grave%20right%20now!%20Sorry,%20Julia.)%3C/p%3E%3Cp%3EThere%20is%20something%20special%20about%20preparing%20this%20stew%20though.%20Anyone%20can%20toss%20meat%20and%20veggies%20in%20a%20slowcooker%20and%20turn%20it%20on%20before%20they%20go%20to%20work.%20The%20house%20will%20smell%20great,%20the%20stew%20will%20taste%20great,%20and%20everyone's%20happy.%20But%20when%20you%20spend%20so%20much%20time%20in%20the%20kitchen,%20taking%20the%20extra%20time%20to%20pat%20your%20meat%20dry,%20braise%20your%20pearl%20onions,%20and%20saut%C3%A9%20your%20mushrooms%20in%20butter.....%20I%20was%20proud%20of%20that%20stew%20when%20I%20served%20it%20up%20for%20my%20family%20tonight!%20That%20was%20a%20labour%20of%20love,%20and%20it%20paid%20off.%20Even%20though%20it%20was%20a%20lot%20more%20work%20than%20regular%20stew,%20I%20enjoyed%20making%20it,%20and%20I%20definitely%20enjoyed%20eating%20it.%20Hopefully%20that%20will%20redeem%20me%20in%20Julia's%20eyes.%3C/p%3E){kind=link}
