%3C/p%3E%3Cp%3EDid%20I%20mention%20that%20these%20pork%20chops%20are%20anything%20but%20plain?%20Simple%20yes.%20A%20few%20steps....of%20course.%20Great%20results...for%20sure.%3C/p%3E%3Cp%3EIt%20all%20starts%20with%20a%20simple%20marinade.%20It's%20even%20titled%20%22Marinade%20Simple%22%20a.k.a.%20Lemon%20Juice%20and%20Herb%20Marinade.%20Julie%20states%20that%20it%20can%20be%20used%20on%20chops,%20steaks%20and%20small%20boned%20roasts.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325'%20F%3C/p%3E%3Cp%3EDry%20the%20pork%20chops%20on%20a%20paper%20towel.%3C/p%3E%3Cp%3EHeat%20the%20fat%20in%20a%20heavy%20large%20oven%20safe%20skillet%20or%20fireproof%20casserole%20dish%20over%20medium%20heat.%20Brown%20the%20chops%20on%20each%20side%20for%203%20-%204%20minutes.%20As%20they%20brown%20transfer%20them%20to%20a%20dish.%20You%20will%20probably%20have%20to%20work%20in%20batches%20of%202%20to%203%20at%20a%20time.%20You%20don't%20want%20to%20crowd%20them%20when%20you%20brown%20them....this%20will%20cause%20them%20to%20steam%20instead%20of%20brown.%3C/p%3E%3Cp%3EPour%20the%20fat%20out%20of%20the%20pan%20and%20discard%20(when%20it%20is%20cool%20and%20save).%20Add%20the%20butter%20and%20garlic%20to%20the%20pan.%20Return%20the%20chops%20to%20the%20pan.%20It's%20ok%20to%20overlap%20them.%20Baste%20them%20with%20the%20melted%20butter%20garlic.%20Cover%20and%20heat%20until%20the%20meat%20sizzles.%20Place%20the%20pan%20in%20the%20lower%203rd%20section%20of%20your%20preheated%20oven%20for%2025%20-%2030%20minutes.%20Once%20or%20twice%20during%20the%20cooking%20time,%20turn%20the%20chops%20over%20and%20baste%20with%20the%20butter%20and%20juices.%3C/p%3E%3Cp%3EThey%20are%20done%20when%20the%20meat%20juices%20run%20clear%20yellow%20with%20no%20traces%20of%20red.%3C/p%3E%3Cp%3ERemove%20the%20chops%20to%20a%20hot%20platter.%3C/p%3E%3Cp%3ERemove%20all%20but%202%20TB%20of%20the%20remaining%20juice%20in%20the%20pan.%20Pour%20in%20the%20liquid%20(in%20my%20case,%20vermouth)%20and%20boil%20rapidly....scraping%20up%20all%20the%20good%20yummy%20crunchies%20off%20the%20bottom.%20Boil%20for%20just%20a%20few%20minutes%20until%20the%20juice%20has%20reduced%20down%20to%201/2%20cup.....this%20is%20your%20concentrated%20sauce.%20Taste%20for%20seasoning%20and%20add%20salt%20and%20pepper%20if%20needed.%3C/p%3E%3Cp%3EPour%20over%20chops%20and%20server%3C/p%3E%3Cp%3EAs%20you%20might%20notice...my%20little%20chops%20were%20not%201%20inch.%20I%20reduced%20the%20cooking%20time%20to%20accommodate.%3C/p%3E%3Cp%3EThey%20were%20delicious!%20And%20tender%20and%20juicy.%20And%20full%20of%20all%20sorts%20of%20wonderful%20flavor.%3C/p%3E%3Cp%3EIf%20you%20haven't%20noticed,%20I%20don't%20cook%20pork%20chops%20very%20often.%20I%20think%20the%20last%20time%20I%20did....I%20did%20the%20shake%20and%20bake%20thing.%20Complete%20with%20a%20side%20of%20apple%20sauce.%20(and%20when%20I%20do%20that%20I%20can't%20help%20but%20think%20of%20Peter%20from%20the%20Brady%20Bunch%20saying...%22Pork%20Chops%20and%20Apple%20Sauce).%20I'm%20not%20use%20to%20these%20little%20beauties%20being%20so%20versatile.%20If%20they%20weren't%20so%20expensive%20in%20the%20market,%20I'd%20probably%20cook%20them%20more%20often.%20(wonder%20if%20the%20pig%20farmers%20and%20big%20markets%20can%20hear%20me?).%20Anyway,%20I'd%20guess%20that%20besides%20bacon,%20I%20cook%20pork%20once%20a%20month%20or%20less.%20How%20often%20do%20you%20cook%20pork?%20(just%20curious)%3C/p%3E){kind=link}
