%20For%20my%20very%20first%20Diwali%20after%20my%20wedding,%20I%20was%20very%20much%20in%20an%20experimenting%20mood,%20so%20I%20made%20Karanji,%20Chakli%20and%20Besan%20Laddoo,%20all%20for%20the%20very%20first%20time%20and%20they%20came%20out%20great!%20%20I%20will%20definitely%20post%20about%20them%20soon.%20We%20had%20cleaned%20up%20the%20whole%20house%20and%20decorated%20everywhere%20with%20beautiful%20diyas(candles).%20And%20bursted%20lots%20of%20crackers...Oh!%20we%20had%20soooo%20much%20fun.%3C/p%3E%3Cp%3EThis%20year%20also%20I%20prepared%20few%20sweets,%20but%20most%20of%20them%20got%20over%20before%20I%20could%20photograph%20them%20:-P%20But%20I%20made%20these%20Kaju%20Katli%20specially%20for%20my%20office%20friends,%20so%20I%20was%20able%20to%20keep%20them%20safe%20and%20take%20few%20quick%20snaps%20:-)%20Its%20really%20easy%20to%20prepare%20them%20and%20I%20don't%20know%20why%20I%20never%20made%20them%20before.%20I%20found%20a%20simple%20recipe%20here%20and%20it%20came%20out%20really%20well.%3C/p%3E%3Cp%3EI%20made%20about%2010-15%20small%20sized%20Kaju%20katli%20with%20this%20recipe.%20You%20can%20make%20this%20Kaju%20Katli%20in%20less%20than%2030minutes%20(if%20done%20correctly),%20I'll%20guarantee%20you%20that!!%3C/p%3E%3Cp%3EKaju%20Katli%20Recipe%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Grind%20the%20cashewnuts%20into%20fine%20powder.%20It%20may%20stick%20while%20grinding,%20thats%20ok,%20just%20scoop%20it%20around%20with%20a%20spatula%20and%20keep%20grinding%20until%20its%20a%20fine%20dust%20like%20powder.%20Take%20out%20a%20heaping%201%20cup%20from%20this.%3C/p%3E%3Cp%3E2.%20Boil%20the%20sugar%20with%20water%20until%20you%20reach%20a%20consistency%20where,%20if%20you%20add%20a%20drop%20of%20sugar%20syrup%20into%20a%20bowl%20with%20water,%20the%20sugar%20syrup%20should%20not%20dissolve%20and%20appears%20like%20a%20fine%20thread%20or%20drop.%3C/p%3E%3Cp%3E3.%20At%20this%20point%20add%20in%20the%20cashew%20powder%20and%20on%20medium-low%20flame%20keep%20stirring%20until%20a%20smooth%20dough%20like%20consistency%20is%20obtained.%20About%203-5mins.%3C/p%3E%3Cp%3E4.%20Grease%20a%20plate%20with%20little%20ghee%20and%20transfer%20this%20dough%20like%20mixture%20onto%20the%20plate%3C/p%3E%3Cp%3E5.%20Allow%20to%20cool%20down%20for%2010mins%20and%20then%20grease%20your%20palms%20with%20ghee%20and%20start%20kneading%20the%20dough.%20Add%20little%20milk,%20only%20if%20the%20dough%20appears%20hard%20and%20dry.%20Do%20not%20add%20too%20much%20milk.%3C/p%3E%3Cp%3E6.%20Slowly%20keep%20kneading%20the%20dough%20until%20it%20becomes%20smooth%20and%20easily%20pliable.%3C/p%3E%3Cp%3E7.%20Roll%20the%20dough%20into%20a%201/4%20inch%20thick%20circle%20or%20square,%20and%20cut%20them%20diagonally%20to%20get%20the%20diamond%20shape.%20(First%20make%20a%20soft%20line%20with%20your%20knife%20on%20the%20rolled%20dough%20before%20cutting%20and%20then%20cut%20over%20that%20line)%3C/p%3E%3Cp%3ESilver%20Decoration%3C/p%3E%3Cp%3EI%20wanted%20the%20silver%20foil%20appearance%20on%20top%20of%20the%20kaju%20katli,%20which%20is%20how%20we%20usually%20get%20it%20back%20home%20in%20India.%20Since%20I%20din't%20have%20any%20silver%20foil,%20I%20used%20edible%20Silver%20Dust%20that's%20commonly%20used%20for%20Cake%20decoration%20:-)%3C/p%3E%3Cp%3EI%20cut%20out%20a%20diamond%20shape%20in%20a%20small%20parchment%20paper%20and%20placed%20it%20on%20top%20of%20each%20Kaju%20Katli%20and%20applied%20the%20Silver%20dust%20with%20a%20brush...Simple!!%20:-)%3C/p%3E%3Cp%3ESuggestions:%3C/p%3E%3Cp%3E1.%20Its%20very%20important%20that%20the%20cashews%20should%20be%20at%20room%20temperature%20,%20or%20else%20it%20may%20get%20all%20sticky%20while%20grinding%3C/p%3E%3Cp%3E2.%20The%20correct%20sugar%20syrup%20consistency%20is%20very%20important%20again%20in%20getting%20this%20burfi/katli%20right.%3C/p%3E%3Cp%3E3.%20Milk%20is%20only%20required%20if%20the%20dough%20appears%20dry%20or%20hard.%20Adding%20milk%20will%20reduce%20the%20shelf%20life%20if%20kept%20out,%20so%20keep%20them%20refrigerated.%3C/p%3E%3Cp%3ESo%20try%20out%20these%20simple,%20beautiful%20and%20yummy%20Kaju%20burfi%20and%20let%20me%20know%20how%20they%20turned%20out%20:-)%20And%20once%20again%20wishing%20you%20all%20a%20very%20Happy%20Diwali%20!!%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
