%3C/p%3E%3Cp%3EToday's%20recipe%20is%20from%20a%20cookbook,%20Vantalu%20Pindivantalu%20by%20Malathi%20Chandur,%20that%20I%20bought%20years%20ago%20in%20a%20small%20book%20shop%20in%20Hyderabad.%20I%20still%20remember%20taking%20my%20mom%20to%20Koti,%20Hyderabad%20to%20buy%20a%20cook%20book.%20After%20asking%20in%20couple%20of%20stores,%20I%20was%20slowly%20getting%20disappointed%20that%20I%20won't%20be%20buying%20a%20cookbook%20that%20day.%20But%20my%20mom%20took%20me%20to%20a%20dusty%20old%20store%20that%20had%20no%20windows%20and%20had%20a%20rickety%20broken%20stairs.%20The%20guy%20said%20he%20had%20some%20cookbooks%20in%20the%20back%20and%20the%20back%20was%20even%20more%20dusty%20and%20dark.%20Well%20finally%20one%20of%20the%20assistants%20came%20down%20from%20the%20attic%20with%20a%20couple%20of%20cookbooks%20and%20I%20ended%20up%20picking%20this%20one.%3C/p%3E%3Cp%3EThis%20book%20was%20first%20published%20way%20back%20in%201974,%20so%20there%20are%20no%20pictures%20and%20the%20recipes%20are%20written%20with%20no%20measurements,%20everything%20is%20written%20in%20terms%20of%20fistfulls%20and%20a%20little%20bit%20more.%20So%20here's%20a%20recipe%20with%20the%20measurements%20I%20came%20up%20with.%20The%20curry%20ended%20up%20super%20tasty,%20do%20give%20it%20a%20try.%20I'm%20sure%20that%20the%20masala%20would%20taste%20great%20with%20other%20veggies%20too.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EKakarakaya%20(Bittergourd)%20-%204%20medium,%20thinly%20sliced%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20Masala/%20Spice%20Paste:%20Heat%202tsp%20oil%20in%20a%20small%20saute%20pan%20and%20fry%20chana%20dal,%20coriander%20seeds%20and%20red%20chilies%20until%20dal%20is%20lightly%20browned%20and%20fragrant,%20about%202-3%20minutes.%20Remove%20into%20a%20bowl.%3C/p%3E%3Cp%3ETo%20the%20same%20pan,%20add%20onions%20and%20fry%20until%20browned%20around%20the%20edges.%20Remove%20from%20the%20pan%20and%20let%20cool%20slightly.%3C/p%3E%3Cp%3EGrind%20the%20chana%20dal%20mixture%20until%20smooth.%20Add%20onions,%20tamarind%20paste,%20grated%20coconut%20and%20salt;%20grind%20until%20smooth.%20Set%20aside.%3C/p%3E%3Cp%3ETo%20make%20the%20Curry:%20(Optional)%20To%20remove%20some%20bitterness%20from%20bittergourd,%20microwave%20it%20with%20some%20salt%20and%201tbsp%20tamarind%20paste%20for%205-6%20minutes%20ot%20until%20the%20veggie%20is%20almost%20cooked%20and%20tender.%20Squeeze%20out%20the%20liquid%20and%20use%20as%20needed.%3C/p%3E%3Cp%3EHeat%201tbsp%20oil%20in%20a%20saute%20pan,%20add%20the%20chopped%20bittergourd%20and%20fry%20until%20it%20turns%20golden,%20about%208-10%20minutes.%20Add%20the%20ground%20masala%20paste,%20mix%20well%20and%20cook%20for%204-5%20minutes.%20This%20curry%20should%20be%20dry,%20so%20don't%20add%20any%20water.%3C/p%3E){kind=link}
