Ingredientes

  • 2 tsp Extra virgin olive oil
  • 1 c. Onion, finely minced
  • 2 x Cloves garlic, chopped
  • 9 3/4 c. Kale, fresh, tightly packed and minced, about 1 lb.
  • 6 1/3 c. Spinach, fresh, tightly packed and minced, about 1 lb. Vegetable cooking spray
  • 3/4 c. Plain lowfat yogurt
  • 1/4 c. Parmesan cheese, grated
  • 2 1/2 Tbsp. All-purpose flour
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1 lb Cottage cheese, lowfat, 1%
  • 2 x Large eggs
  • 1 x Egg white
  • 1 1/2 Tbsp. Parmesan cheese, grated

Direcciones

  1. Heat oil in a Dutch oven over medium heat. Add in onion and garlic; saute/fry 3 min. Add in kale and spinach, stirring well. Reduce heat to medium-low; cover and cook 20 min or possibly till wilted, stirring occasionally. Remove from heat, and spoon into a 2-qt baking dish coated with cooking spray.
  2. Set aside.
  3. Position knife blade in a food processor bowl; add in yogurt and next 8 ingredients. Process till smooth. Pour yogurt mix over greens, stirring gently. Sprinkle with 1 1/2 Tbsp. Parmesan cheese. Bake, uncovered, at 350 F for 40 min.
