%20and%20whip%20out%20a%20box%20of%20KD%20or%20frozen%20hot%20and%20spicy%20chicken%20fingers,%20when%20I%20realized%20that%20if%20I%20didn't%20eat%20that%20last%20half%20bunch%20of%20kale%20that%20very%20day,%20it%20would%20go%20bad,%20a%20thought%20that%20would%20surely%20traumatize%20me%20for%20the%20rest%20of%20the%20week,%20meaning%20sleepless%20nights%20laying%20%20in%20bed%20feeling%20guilty%20self-hatred%20about%20wasting%20good%20food.%20I%20knew%20that%20if%20I%20was%20going%20to%20make%20good%20use%20out%20of%20that%20kale,%20I%20would%20have%20to%20get%20creative%20and%20come%20up%20with%20a%20completely%20different%20type%20of%20kale%20salad%20from%20anything%20I%20have%20made%20before.%20With%20a%20big%20bowl%20full%20of%20fresh,%20hand-picked%20Ontario%20apples,%20that%20task%20wasn't%20too%20daunting.%20As%20soon%20as%20I%20got%20out%20my%20pad%20of%20foolscap%20to%20start%20jotting%20down%20kale%20salad%20ideas,%20scribbling%20down%20different%20flavour%20combinations%20that%20would%20shine%20with%20apples%20and%20kale,%20my%20stomach%20began%20to%20rumble%20and%20I%20started%20to%20get%20excited%20about%20kale%20once%20again.%20Who%20woulda%20thunk%20it?%3C/p%3E%3Cp%3EMy%20apple%20and%20kale%20salad%20turned%20out%20to%20be%20just%20the%20combination%20I%20was%20looking%20for%20to%20drag%20me%20out%20of%20my%20kale%20rut.%20The%20crunchy,%20sweet,%20and%20slightly%20tart%20Ontario%20apples%20worked%20perfectly%20against%20the%20slightly%20bitter%20kale.%20I%20knew%20that%20I%20would%20have%20to%20play%20with%20textures%20to%20get%20me%20devouring%20this%20salad%20until%20the%20bottom%20of%20the%20bowl,%20so%20I%20first%20toasted%20up%20some%20slivered%20almonds%20for%20a%20crunch%20and%20warm,%20nutty%20flavour,%20as%20well%20as%20a%20handful%20of%20trail%20mix%20filled%20with%20an%20assortment%20of%20other%20whole%20nuts%20(including%20peanuts,%20hazelnuts,%20almonds,%20cashews,%20sunflower%20seeds,%20pumpkin%20seeds,%20and%20raisins).%20To%20contrast%20all%20that%20crunch%20from%20the%20nuts%20and%20the%20apple,%20I%20crumbled%20in%20some%20tangy%20goat%20cheese%20to%20add%20a%20wonderful%20creaminess.%20A%20light%20sprinkle%20of%20some%20chia%20seeds%20for%20extra%20healthy%20points,%20and%20a%20drizzle%20of%20some%20store-bought%20vinaigrette%20dressing%20(yes,%20I%20cheated%20a%20little!)%20and%20this%20salad%20was%20ready%20for%20tasting!%20One%20taste%20said%20it%20all.%20This%20is%20was%20definitely%20my%20new%20favourite%20salad,%20not%20just%20kale%20salad,%20but%20salad%20in%20general!%20It%20had%20everything%20I%20was%20looking%20for%20in%20terms%20of%20health%20benefits%20and%20big%20flavours,%20and%20made%20me%20forget%20all%20about%20that%20box%20of%20KD%20and%20frozen%20chicken%20fingers!%3C/p%3E%3Cp%3E*%20Don't%20choose%20a%20creamy%20vinaigrette%20as%20the%20goat%20cheese%20will%20already%20give%20the%20salad%20the%20creaminess%20to%20offset%20the%20crunch%20from%20the%20other%20toppings.%3C/p%3E%3Cp%3E(serves%20one)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1/2%20bunch%20kale,%20washed,%20dried,%20torn%20into%20smaller%20pieces%3C/p%3E%3Cp%3Eabout%201%20tbsp%20olive%20oil%3C/p%3E%3Cp%3E1%20medium%20eating%20apple%20(I%20used%20Cortland%20thanks%20to%20its%20sweet%20and%20juicy%20flavour%20with%20just%20a%20bit%20of%20tartness.%20Cortlands%20also%20take%20longer%20to%20brown,%20which%20makes%20them%20great%20for%20salads!),%20cut%20into%201-cm%20strips%3C/p%3E%3Cp%3Ehandful%20of%20slivered%20almonds,%20toasted%3C/p%3E%3Cp%3Ehandful%20of%20trail%20mix%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EAdd%20kale%20to%20a%20medium%20mixing%20bowl%20and%20drizzle%20with%20about%201%20tbsp%20olive%20oil.%20Sprinkle%20over%20a%20pinch%20of%20salt.%20Using%20clean%20fingertips,%20massage%20kale%20for%20about%201-minute,%20or%20until%20the%20kale%20has%20softened%20slightly%20and%20is%20not%20tough.%3C/p%3E%3Cp%3EAdd%20in%20the%20apple%20strips,%20slivered%20almonds,%20trail%20mix,%20goat%20cheese,%20and%20chia%20seeds%20and%20toss.%20Add%20the%20vinaigrette%20(a%20bit%20at%20a%20time%20so%20you%20don't%20overdress)%20and%20toss.%20Taste%20and%20season%20with%20salt%20and%20freshly%20ground%20pepper.%20Taste%20once%20more%20and%20season%20again%20if%20needed.%20Serve%20immediately!%3C/p%3E%3Cp%3EListening%20To:%3C/p%3E){kind=link}
