%20I%20knew%20it%20was%20time%20to%20stop%20blaming%20my%20cozy%20winter%20clothes%20and%20take%20the%20matter%20into%20my%20own%20hands...or%20stomach.%3C/p%3E%3Cp%3EI%20was%20inspired%20to%20make%20this%20salad%20after%20being%20attracted%20to%20so%20many%20images%20of%20beautifully%20presented%20salads%20topped%20with%20poached%20eggs%20on%20various%20blogs%20and%20websites.%20My%20Pinterest%20boards%20look%20as%20though%20they%20have%20been%20attacked%20with%20these%20images,%20as%20I%20am%20consistently%20drawn%20to%20them,%20pinning%20pretty%20much%20each%20and%20every%20one%20I%20come%20across.%20I%20began%20brainstorming%20and%20developing%20this%20recipe%20after%20going%20out%20for%20a%20friends%20birthday%20dinner%20last%20Friday,%20seeing%20almost%20every%20single%20person%20at%20our%20large%20table%20order%20the%20kale%20salad,%20and%20proceed%20to%20devour%20said%20salad,%20raving%20on%20about%20how%20delicious%20it%20was.%20Raw%20kale%20delicious?%20This%20was%20news%20to%20me.%3C/p%3E%3Cp%3EI%20had%20only%20ever%20experimented%20with%20cooked%20kale,%20disguising%20the%20bitter%20flavours%20and%20tough%20texture%20with%20herbs,%20seasonings,%20oils,%20and%20various%20cooking%20methods.%20My%20experience%20with%20raw%20kale%20wasn't%20so%20fantastic,%20experiencing%20those%20same%20bitter%20flavours%20and%20tough%20textures%20in%20the%20few%20times%20I%20ate%20it.%20But%20watching%2010%20or%20so%20people%20devour%20a%20large%20bowl%20of%20raw%20kale,%20dressed%20in%20simply%20a%20light%20vinaigrette%20and%20a%20few%20slices%20of%20parmesan%20cheese%20made%20me%20reconsider%20the%20notorious%20%22super%20food%22.%20Kale%20is%20a%20super%20food%20for%20many%20reasons,%20but%20the%20reason%20that%20sparked%20my%20interest%20in%20kale%20is%20its%20extreme%20alkalizing%20effect%20on%20the%20body.%20I%20was%20determined%20to%20come%20up%20with%20a%20delicious%20raw%20kale%20recipe!%20I%20did%20some%20research%20and%20quickly%20learned%20that%20the%20way%20to%20achieve%20tender%20raw%20kale%20is%20to%20massage%20it%20with%20olive%20oil%20and%20sea%20salt.%20I%20was%20shocked%20to%20feel%20with%20my%20own%20hands%20just%20how%20quickly%20the%20kale's%20texture%20was%20transformed%20by%20the%20olive%20oil%20and%20sea%20salt%20massage.%20In%20hardly%20any%20time%20at%20all,%20I%20had%20a%20delicious%20(man%20was%20in%20ever%20delicious!)%20and%20satisfying%20dinner%20that%20I%20could%20feel%20good%20about%20putting%20into%20my%20body.%20This%20is%20one%20recipe%20I%20will%20definitely%20be%20making%20on%20the%20regular!%3C/p%3E%3Cp%3ENote:%20Make%20this%20a%20vegetarian%20dish%20by%20eliminating%20the%20bacon.%3C/p%3E%3Cp%3E*Massage%20your%20kale%20with%20olive%20oil%20and%20sea%20salt%20to%20tenderize%20the%20tough%20kale%20leaves.%20You'll%20be%20surprised%20at%20how%20quickly%20they%20soften%20up!%3C/p%3E%3Cp%3E**I%20would%20recommend%20using%20a%20poach%20pod%20as%20it%20keeps%20the%20egg%20intact%20and%20eliminates%20the%20issue%20of%20watery%20eggs.%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl%20whisk%20together%20red%20wine%20vinegar,%20honey,%20grainy%20dijon%20mustard,%20pepper,%20garlic,%20olive%20oil,%20and%20hot%20sauce.%20Taste%20and%20adjust%20seasonings%20if%20needed.%20Set%20aside.%20Note%20that%20the%20kale%20will%20be%20rubbed%20with%20sea%20salt%20and%20additional%20olive%20oil,%20so%20season%20with%20salt%20after%20kale%20leaves%20are%20dressed.%3C/p%3E%3Cp%3ERoll%20up%20kale%20leaves%20into%20a%20cigar-type%20shape%20and%20chiffonade.%20Transfer%20to%20a%20bowl%20and%20drizzle%20lightly%20with%20olive%20oil%20and%20sea%20salt.%20Using%20clean%20fingertips,%20massage%20the%20kale%20for%202-3%20minutes,%20or%20until%20leaves%20feel%20tender.%20Set%20aside.%3C/p%3E%3Cp%3EAdd%20bacon%20slices%20to%20a%20small%20cold%20pan.%20Turn%20heat%20to%20medium%20and%20cook%20until%20crisp%20and%20brown.%20Using%20a%20slotted%20spoon,%20transfer%20bacon%20to%20a%20piece%20of%20paper%20towel%20to%20drain,%20and%20pour%20out%20excess%20fat%20in%20pan,%20allowing%20about%201/2%20tablespoon%20to%20remain.%3C/p%3E%3Cp%3EAdd%20the%20shallots%20to%20the%20same%20pan%20and%20cook%20until%20golden-brown%20and%20just%20beginning%20to%20crisp.%20Remove%20and%20set%20aside.%3C/p%3E%3Cp%3EAdd%20the%20cherry%20tomatoes%20and%20cook%20until%20skins%20burst.%20Turn%20off%20heat%20and%20set%20aside.%3C/p%3E%3Cp%3EWhile%20tomatoes%20are%20cooking,%20poach%20the%20eggs.%20Either%20follow%20the%20instructions%20here%20to%20poach%20an%20egg,%20or%20use%20the%20method%20I%20did,%20by%20using%20a%20handy%20poaching%20pod.%20If%20using%20a%20poach%20pod**,%20bring%201%201/2%20inches%20of%20water%20to%20a%20rolling%20boil%20in%20a%20small%20saucepan.%20Crack%20the%20eggs%20into%20lightly%20oiled%20poaching%20pods%20and%20carefully%20place%20in%20water%20to%20float.%20Reduce%20heat%20to%20low%20to%20allow%20to%20simmer%20and%20cover%20tightly.%20Cook%20fo
