Kamut Berries with Dandelion Greens

Yup, dandelions like the garden weed. But they are so deliciously bitter and so incredibly good for you. I had no problem finding them at my local food market.

Ingredientes

  • 1 c cooked Kamut berries (or wheat berries. They both cook like rice in a 2:1 ratio of water and take about 45 minutes)
  • salt
  • pepper
  • olive oil
  • 1/3 c chopped walnuts
  • 3/4 c chopped dandelion greens (about 1 bunch)
  • 1/3 c chopped pitted green olives
  • 1 T red wine vinegar
  • 1/2 c bleu cheese crumbles
  • 1 T fresh basil, minced

Direcciones

  1. Heat a small amount of olive oil in a large pan and toast the walnuts, just until you can smell them and they are golden brown.
  2. Remove from the heat.
  3. Stir in the kamut berries, dandelions and olives.
  4. Season to taste. If needed return the pan to the heat to ensure all the dandelions are wilted.
  5. Add vinegar and half the cheese.
  6. Top with basil and remaining cheese for serving.
