Receta Kamut Berries with Dandelion Greens
Yup, dandelions like the garden weed. But they are so deliciously bitter and so incredibly good for you. I had no problem finding them at my local food market.

Ingredientes
- 1 c cooked Kamut berries (or wheat berries. They both cook like rice in a 2:1 ratio of water and take about 45 minutes)
- salt
- pepper
- olive oil
- 1/3 c chopped walnuts
- 3/4 c chopped dandelion greens (about 1 bunch)
- 1/3 c chopped pitted green olives
- 1 T red wine vinegar
- 1/2 c bleu cheese crumbles
- 1 T fresh basil, minced
Direcciones
- Heat a small amount of olive oil in a large pan and toast the walnuts, just until you can smell them and they are golden brown.
- Remove from the heat.
- Stir in the kamut berries, dandelions and olives.
- Season to taste. If needed return the pan to the heat to ensure all the dandelions are wilted.
- Add vinegar and half the cheese.
- Top with basil and remaining cheese for serving.
