.%20I'm%20not%20talking%20about%20one%20of%20those%20plastic%20bags%20from%20the%20grocery%20store.%20I'm%20talking%20about%20a%20huge%20thick%20plastic%20bag.%20I%20have%20no%20idea%20how%20many%20pounds%20it%20was%20(multiple)%20but%20I%20do%20know%20that%20I%20ended%20up%20with%20more%20than%206%20cups%20of%20juice!%3C/p%3E%3Cp%3EHer%20request?%20%22Can%20you%20make%20a%20key%20lime%20cheesecake?%22%3C/p%3E%3Cp%3EI'm%20thinking....Ummm...sure.%20But%20I've%20never%20even%20tasted,%20let%20alone%20made%20a%20key%20lime%20pie.%20How%20will%20I%20know%20if%20it%20ends%20up%20right?%20I%20have%20nothing%20to%20compare%20it%20with.%3C/p%3E%3Cp%3EThere%20begins%20the%20challenge.%20I%20searched%20through%20several%20recipes.%20Read%20numerous%20reviews.%20Omitted%20any%20recipe%20that%20called%20for%20flour.%20Is%20that%20weird?%20I've%20just%20never%20made%20a%20cheesecake%20with%20flour.%20I%20don't%20understand%20why%20it%20would%20even%20be%20required.%20In%20my%20mind,%20something%20isn't%20right.%20Am%20I%20being%20a%20cheesecake%20snob?%20Do%20I%20need%20to%20be%20enlightened%20here?%20Please%20fill%20me%20in%20if%20I'm%20being%20ignorant%20about%20this.%3C/p%3E%3Cp%3EAnyways....I%20came%20across%20a%20recipe%20that%20not%20only%20had%20a%20good%20solid%20cheesecake%20recipe,%20but%20included%20a%20delicious%20surprise%20inside.......%3C/p%3E%3Cp%3EKey%20Lime%20Custard!!%20Yes,%20there%20is%20a%20layer%20of%20amazing%20key%20lime%20custard%20underneath%20all%20that%20cream%20cheese%20deliciousness.%3C/p%3E%3Cp%3EThere's%20also%20a%20layer%20of%20sour%20cream%20on%20top.%20In%20the%20reviews,%20several%20people%20whined%20about%20it.%20How%20it's%20not%20needed.%20They%20didn't%20understand%20why%20it%20was%20even%20in%20the%20recipe.%20I%20personally%20add%20this%20particular%20layer%20to%20just%20about%20every%20cheesecake%20I%20make.%20If%20it's%20not%20your%20thing...by%20all%20means,%20don't%20worry%20about%20it.%20just%20leave%20it%20off%20and%20bake%20the%20cheesecake%20an%20extra%2010%20minutes.%3C/p%3E%3Cp%3EKey%20Lime%20Cheesecake%20with%20Key%20Lime%20Custard%3C/p%3E%3Cp%3EIn%20a%20heavy%20sauce%20pan,%20over%20medium%20heat,%20whisk%20together%20all%20of%20the%20custard%20ingredients.%20Continue%20whisking%20until%20it%20boils%20and%20let%20boil,%20while%20whisking,%20for%2030%20seconds.%20This%20will%20take%20about%208%20or%209%20minutes.%3C/p%3E%3Cp%3EI%20cannot%20stress%20enough%20how%20important%20it%20is%20to%20whisk!%20Not%20stir.%20Whisk!!%20You%20do%20not%20want%20the%20egg%20yolks%20to%20scramble.%20Scrambled%20custard%20would%20just%20be%20nasty.%3C/p%3E%3Cp%3ECool%20to%20room%20temperature,%20stirring%20occasionally,%20keeping%20in%20mind%20that%20it%20will%20thicken%20more%20as%20it%20cools.%20Set%20aside.%3C/p%3E%3Cp%3ECrust:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350'%3C/p%3E%3Cp%3EWrap%20the%20outside%20of%20a%208'%20or%209%22%20springform%20pan%20with%203%20layers%20of%20aluminum%20foil.%20You%20need%20the%20foil%20to%20go%20up%20the%20sides%20about%203%22.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20the%20graham%20cracker%20crumbs%20and%20sugar.%20Stir%20in%20the%20melted%20butter%20until%20well%20combined.%3C/p%3E%3Cp%3EPress%20the%20mixture%20inside%20your%20prepared%20springform%20pan,%20and%20up%20the%20sides%20about%202%20inches.%3C/p%3E%3Cp%3EBake%20for%20about%205%20minutes%20and%20allow%20to%20cool%20completely.%3C/p%3E%3Cp%3EFilling:%3C/p%3E%3Cp%3ECream%20the%20cheese%20and%202/3%20cup%20of%20sugar%20until%20almost%20smooth%20(don't%20stress%20about%20the%20lumps.%20They'll%20go%20away%20while%20baking).%20Mix%20in%20the%20key%20lime%20juice%20and%20zest.%20Add%20the%20eggs%20one%20at%20a%20time%20and%20blend%20until%20just%20combined.%20Don't%20over%20blend.%20You%20don't%20want%20air%20bubbles%20in%20your%20cheesecake.%20Air%20bubbles%20help%20create%20cracks.%3C/p%3E%3Cp%3EAssembly%20and%20Baking:%3C/p%3E%3Cp%3ESpoon%20the%20custard%20into%20your%20crust,%20making%20it%20as%20even%20as%20possible%20and%20smooth%20it%20over.%3C/p%3E%3Cp%3ESpoon%20the%20filling%20over%20the%20custard,%20carefully.%3C/p%3E%3Cp%3EUsing%20a%20roasting%20pan%20that's%20big%20enough%20to%20hold%20the%20springform%20pan,%20place%20the%20springform%20pan%20into%20the%20roasting%20pan.%20Pour%20enough%20water%20in%20the%20roasting%20pan%20so%20that%20the%20water%20comes%201%22%20up%20the%20sides%20of%20the%20springform%20pan.%3C/p%3E%3Cp%3EIn%20your%20already%20350'%20heated%20oven,%20bake%20for%20about%2045%20minutes,%20or%20until%20just%20set.%20Just%20set%20means%20that%20it's%20still%20a%20slightly%20jiggly%20and%20the%20center%20is%20not%20all%20puffy.%3C/p%3E%3Cp%3EWhile%20the%20cheesecake%20is%20baking,%20in%20a%20medium%20bowl,%20mix%20together%20the%20sour%20cream%20and%203%20tablespoons%20of%20sugar.%3C/p%3E%3Cp%3EWhen%20the%2045%20minutes%20is%20up,%20spoon%20the%20sour%20cream%20mixture%20over%20the%20top%20and%20bake%20for%20an%20additional%2010%20minutes.%3C/p%3E%3Cp%3EPlace%20on%20a%20cooling%20rack%20and%20let%20cool%20for%20about%2010%20minutes.%20Remove%20the%20foil%20and%20remove%20the%20springform%20pan%20siding.%20If%20needed,%20run%20a%20knife%20around%20the%20edge.%20Let%20cool%20completely%20then%20cover%20and%20refrigerate%20over%20night,%20allowing%20it%20to%20completely%20set.%3C/p%3E%3Cp%3EGarnish%20with%20lime%20slices%20and%20zest%20if%20desired.%3C/p%3E%3Cp%3EIt%20is%20tart%20and%20sweet%20and%20absolutely%20delicious!%3C/p%3E%3Cp%3EThis%20was%20the%20first%20time%20I%20had%20done%20the%20whole%20foil%20with%20the%20pan%20in%20water%20thing.%20I%20almost%20didn't.%20I%20typically%20just%20place%20a%20pan%20of%20water%20on%20the%20rack%20below%20which%20creates%20steam%20and%20helps%20with%20the%20whole%20cracking%20thing.%20But%20because%20of%20the%20custard,%20I%20chose%20to%20do%20as%20I'm%20told.%20It%20worked%20and%20the%20'mmmm'%20sound%20that%20came%20from%20my%20chica's%20as%20she%20ate%20it,%20told%20me%20that%20it%20was%20a%20success.%3C/p%3E%3Cp%3EThank%20you%20for%20the%20key%20limes,%20Nancy!%3C/p%3E){kind=link}
