%20was%20special%20to%20Malayalam%20and%20not%20in%20other%20South%20Indian%20languages%20especially%20Tamil%20where%20instead%20the%20'lla'%20sound%20was%20used.%20That%20was%20before%20I%20discovered%20Kozhukkatai.%20These%20are%20steamed%20rice%20dumplings%20popular%20in%20both%20sweet%20&%20savoury%20versions%20and%20belong%20to%20most%20South%20Indian%20cuisines%20whether%20you%20call%20them%20undi,%20modak,%20kozhukatta%20or%20whatever.%3C/p%3E%3Cp%3ERight%20from%20the%20beginning%20I%20didn't%20like%20the%20name%20or%20the%20dish%20either%20-both%20sweet%20and%20savoury%20versions.%20So%20the%20dish%20never%20featured%20in%20the%20regular%20menu.%20I%20could%20manage%20the%20sweet%20ones%20sometimes%20but%20never%20the%20savoury%20ones.%20But%20as%20my%20tastebuds%20developed%20and%20so%20did%20the%20health%20fad,%20I%20found%20them%20a%20perfect%20fit%20within%20the%20diet%20plan.%20They%20are%20not%20made%20of%20fatty%20all%20purpose%20flour,%20but%20rice%20flour.%20(BTW,%20they%20are%20leaner,%20healthy%20cousins%20of%20momos).%20They%20are%20steamed%20and%20not%20deep%20fried.%20So%20I%20started%20making%20these%20and%20had%20fairy%20good%20ones%20using%20the%20rice%20flour.%20But%20the%20original%20ones%20are%20usually%20made%20by%20soaking%20and%20grinding%20rice.%20One%20such%20recipe%20I%20had%20bookmarked%20from%20Solai's%20Kitchen.%20I%20served%20it%20with%20Tomato%20Chutney%20or%20tomato%20thuvayal%20from%20her%20site%20to%20get%20a%20Chettinad%20Special%20Tiffin.%3C/p%3E%3Cp%3EKozhukattai%20/Steamed%20Rice%20Dumplings%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3ESoak%20the%20rice%20in%20enough%20water%20for%20an%20hour.%20Grind%20to%20a%20courser%20paste%20in%20a%20mixer%20adding%20just%20enough%20water%20and%20salt.%20Add%201%20cup%20more%20water%20to%20this.%20Keep%20aside.%3C/p%3E%3Cp%3EIn%20a%20deep%20pan,%20heat%20oil%20and%20add%20mustard%20seeds.%20When%20the%20mustard%20splutters%20add%20the%20urad%20and%20chana%20dals%20and%20let%20it%20brown.%20Add%20the%20curryleaves,%20red%20chillies%20and%20saute%20for%20a%20minute,%20then%20add%20the%20fresh%20coconut%20and%20saute%20for%20%20another%20minute.Then%20add%20the%20ground%20batter%20to%20the%20pan.%20Start%20stirring%20to%20prevent%20it%20from%20sticking%20to%20the%20bottom%20and%20burning.%20Continue%20cooking%20the%20batter%20and%20stirring%20with%20a%20ladle/spoon%20till%20the%20batter%20starts%20thickening%20and%20everything%20is%20mixed%20well.%20Remove%20from%20the%20stove%20when%20the%20batter%20is%20of%20a%20thick%20consistency%20and%20you%20can%20roll%20out%20balls%20out%20of%20it.%20Allow%20the%20batter%20to%20cool%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3EMake%20shapes%20or%20balls%20of%20the%20batter%20or%20kozhukattais.%20Steam%20these%20in%20a%20steamer/idly%20pot%20for%20exactly%205%20minutes.%20Take%20out%20and%20serve%20warm%20with%20chosen%20side%20dish.%20These%20are%20flavoured%20and%20can%20be%20eaten%20without%20any%20accompaniments.%20I%20loved%20the%20dumplings%20as%20such%20also%20though.%3C/p%3E%3Cp%3ETomato%20chutney%20is%20often%20an%20accompaniment%20to%20this%20dish.%20I%20tried%20out%20the%20combination%20and%20it%20was%20gr8.%20I%20had%20tried%20the%20chutney%20or%20thuvayal%20recipe%20from%20Solai%20and%20it%20was%20also%20perfect%20for%20the%20regular%20breakfast%20items%20as%20well.%3C/p%3E%3Cp%3ETomato%20Chutney%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ETomatoes:%204%20medium%20chopped%3C/p%3E%3Cp%3EOnions:2%20chopped%3C/p%3E%3Cp%3ERed%20chillies:%203%20+/-%20as%20per%20taste%3C/p%3E%3Cp%3ECurryLeaves:%20handful%20divided%3C/p%3E%3Cp%3ESeasoning:%3C/p%3E%3Cp%3EOil:%201%20tbsp%20divided%3C/p%3E%3Cp%3EMustard%20Seeds:%201/2%20tsp%3C/p%3E%3Cp%3EUrad%20dal:%201/2%20tsp%3C/p%3E%3Cp%3ESalt:%20as%20per%20taste%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EChop%20the%20onions%20nd%20tomatoes%20into%20small%20pieces.%20Heat%20about%201/2-1%20tsp%20oil%20in%20a%20deep%20pan%20and%20add%20few%20curryleaves%20and%20chillies.Saute%20for%20a%20second%20and%20add%20onions.%20Saute%20till%20they%20turn%20pink%20and%20then%20add%20the%20chopped%20tomatoes.%20Let%20it%20%20cook%20they%20the%20tomatoes%20are%20pulpy.%20Then%20remove%20from%20gas%20and%20blend%20to%20a%20fine%20paste%20when%20cooled%20a%20bit.Do%20the%20taste%20test%20and%20adjust%20the%20salt%20and%20other%20ingredients%20as%20needed.%3C/p%3E%3Cp%3EHeat%20remaining%20oil%20in%20another%20pan%20and%20let%20mustard%20splutter%20and%20the%20dal%20brown.%20Add%20in%20the%20remaining%20curry%20leaves%20and%20then%20take%20it%20off%20the%20stove.%20Excess%20oil%20can%20be%20added%20to%20the%20chutney%20which%20will%20help%20keep%20it%20fresh%20for%20a%20longer%20period%20of%20time.%3C/p%3E){kind=link}
