- 1 teaspoon turmeric powder
- 6 cloves garlic
- 1 inch piece ginger
- 2 medium onions
- 10 pearl onions
- 1 1/4 - 1 1/2 teaspoon salt
- 1 teaspoon ghee
- 1/4 cup coconut oil
- 1 tablespoon sliced pearl onions
- Curry leaves
- Thinly sliced fried potatoes, optional

%3C/p%3E%3Cp%3EI've%20made%20this%20recipe%20a%20number%20of%20times%20already%20and%20it%20gives%20consistent%20results%20each%20time.%20There's%20barely%20anything%20to%20do%20at%20all%20but%20at%20the%20end%20of%20it,%20you%20are%20rewarded%20with%20the%20most%20tastiest%20Duck%20Roast%20ever!%20I%20made%20this%20today%20to%20serve%20alongside%20Appam.%20So%20I%20made%20the%20gravy%20a%20little%20more%20loose%20than%20I%20would%20if%20I%20were%20to%20serve%20it%20with%20rice%20and%20kachiyamoru.%20So%20go%20with%20what%20you%20need%20it%20for.%20Usually%20duck%20is%20sold%20with%20skin-on.%20We%20use%20it%20as%20is%20and%20that's%20the%20ideal%20way%20to%20get%20the%20maximum%20flavor%20for%20the%20curry.%20I%20buy%20our%20duck%20from%20the%20Oriental%20store%20but%20the%20duck%20we%20get%20here%20are%20heavy%20on%20the%20skin%20and%20fat%20so%20I%20trim%20any%20excess%20or%20loose%20skin%20and%20discard%20it.%20I%20don't%20use%20the%20giblets,that%20also%20goes%20into%20the%20bin.%3C/p%3E%3Cp%3EWe%20are%20a%20duck-meat%20loving%20family.%20When%20I%20was%20in%20India,%20our%20duck%20always%20came%20from%20Pallikuttumma.%20It%20was%20and%20still%20is%20the%20most%20tastiest%20duck%20that%20I've%20ever%20eaten.%20The%20meat%20is%20dark%20and%20so%20good!%20Whenever%20we%20go%20to%20Pallikuttumma,%20Achamma%20aunty%20will%20make%20sure%20there's%20a%20duck%20curry%20on%20the%20table%20especially%20for%20Appa.%20Since%20Appa%20loves%20it%20so%20much,%20Amma%20would%20buy%20some%20and%20freeze%20it%20to%20take%20with%20us%20to%20Kannur.%20Amma's%20most%20favourite%20way%20of%20cooking%20a%20'Tharavu'%20is%20by%20using%20her%20Ammachi's%20Tharavu%20Piralen%20recipe,%20which%20I%20agree%20is%20my%20favourite%20too!%3C/p%3E%3Cp%3EVelliammachi%20passed%20away%20when%20I%20was%20three,%20around%20Zara's%20age.%20So%20I%20don't%20recollect%20eating%20anything%20that%20she%20made%20with%20her%20hands.%20I%20personally%20feel,%20heirloom%20recipes%20are%20the%20best%20possible%20ways%20to%20taste%20what%20your%20ancestors%20cooked.%20So%20whenever%20Amma%20makes%20Tharavu%20Piralen%20and%20whenever%20I%20make%20it%20at%20home,%20it%20gives%20me%20an%20extra%20special%20feel%20and%20I%20make%20that%20curry%20with%20the%20utmost%20care,%20love%20and%20attention.%3C/p%3E%3Cp%3EWhile%20today's%20dish%20is%20Duck%20Roast%20which%20by%20the%20way%20is%20a%20recipe%20from%20one%20of%20my%20most%20used%20cookbooks%20-%20Ente%20Tharavdu%20Pachakam%20by%20Aswathy%20Mathan,%20it%20is%20again%20an%20heirloom%20recipe%20from%20the%20author's%20family.%20No%20wonder%20it%20tastes%20exceptional!%3C/p%3E%3Cp%3EKUTTANADAN%20DUCK%20ROAST%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EGrind%20together%20all%20the%20ingredients%20from%20white%20vinegar%20through%20salt%20into%20a%20fine%20paste.%20You%20don't%20have%20to%20add%20water,%20onions%20will%20take%20care%20of%20it.%3C/p%3E%3Cp%3EInto%20a%20large%20pan,%20add%20the%20duck%20pieces%20and%20pour%20the%20ground%20paste%20over%20it.%20Mix%20well%20and%20let%20it%20marinate%20for%20an%20hour.%20Once%20the%20time%20is%20up,%20add%201%20cup%20water%20and%20cook%20the%20duck%20covered%20on%20medium%20heat%20until%20it's%20almost%20cooked,about%2035%20minutes.%20Separate%20the%20almost-cooked%20pieces%20from%20the%20gravy.%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20preferably%20with%20tall%20sides%20to%20avoid%20spluttering,%20heat%20the%20coconut%20oil%20and%20add%20a%20couple%20sprigs%20of%20curry%20leaves.%20Add%20the%20duck%20pieces%20to%20it,a%20few%20pieces%20at%20a%20time%20and%20fry%20until%20golden%20on%20all%20sides.%20Repeat%20until%20all%20pieces%20are%20fried.%3C/p%3E%3Cp%3ETo%20the%20remaining%20oil,%20add%20the%20ghee%20and%20saute%20the%20sliced%20pearl%20onions.%20Pour%20the%20reserved%20gravy%20into%20it%20along%20with%20the%20fried%20duck%20pieces%20and%20let%20it%20come%20to%20a%20boil.%20It%20will%20thicken%20very%20quickly%20and%20darken%20in%20colour%20as%20well.%3C/p%3E%3Cp%3EAdjust%20the%20consistency%20as%20per%20your%20need.%20Check%20for%20seasonings%20and%20serve%20garnished%20with%20thinly%20sliced%20and%20fried%20potatoes%20on%20top!%3C/p%3E%3Cp%3EI%20cannot%20tell%20you%20enough%20how%20much%20I%20want%20you%20all%20to%20try%20this%20recipe.%20It's%20so%20good!%20Like%20I%20mentioned%20earlier,%20the%20gravy%20consistency%20is%20upto%20you.%20If%20it's%20to%20be%20served%20with%20Appam,%20it%20needs%20more%20gravy,%20so%20stop%20as%20soon%20as%20the%20gravy%20and%20pieces%20come%20to%20a%20boil.%20If%20you%20want%20to%20serve%20it%20with%20rice%20and%20kachiyamoru%20(deadly%20combo!!!),%20reduce%20further%20till%20the%20pieces%20gets%20coated%20with%20the%20gravy.%3C/p%3E%3Cp%3EIan%20and%20Zara%20love%20Duck%20Roast%20as%20much%20as%20we%20both%20do!%20Usually%20one%20kilo%20of%20chicken%20last%20for%20atleast%20two%20or%20three%20meals%20but%20when%20it's%20Duck%20Roast,%20it%20vanishes!%3C/p%3E){kind=link}
