%20will%20easily%20identify%20with%20all%20these%20yummy%20delicacies.%3C/p%3E%3Cp%3EAfter%20moving%20to%20the%20US,%20I%20tried%20and%20made%20these%20things%20at%20home%20-%20but,%20never%20got%20the%20Pav%20taste%20ever.%20The%20burger%20buns%20never%20did%20justice%20to%20the%20dishes.%20The%20closest%20to%20our%20Mumbai%20Ladi-Pav%20were%20the%20potato%20rolls%20and%20then%20the%20kaiser%20rolls.%3C/p%3E%3Cp%3EI%20started%20reading%20and%20then%20stumbled%20upon%20a%20recipe%20for%20ladi-pav%20on%20various%20blogs%20-%20many%20blogs%20had%20this%20same%20recipe.%20I%20do%20not%20remember%20which%20blog%20I%20had%20picked%20this%20recipe%20from%20(sorry)%20and%20hence%20cannot%20give%20direct%20credit%20to%20the%20person%20-%20but%20would%20like%20to%20reiterate%20-%20this%20is%20not%20my%20original%20recipe%20and%20it%20is%20something%20that%20I%20had%20noted%20down%20from%20the%20internet%20a%20couple%20of%20years%20ago.%3C/p%3E%3Cp%3EYup,%20a%20few%20years%20ago%20I%20used%20to%20write%20down%20recipes%20from%20blogs%20and%20have%20a%20book%20made%20of%20recipes%20from%20the%20internet/blogs%20-%20sadly,%20I%20never%20noted%20the%20source.%20But,%20now%20after%20I%20started%20a%20blog%20of%20my%20own.....%20I%20know%20the%20importance%20of%20noting%20the%20source%20and%20have%20been%20doing%20so%20whenever%20i%20bookmark%20a%20recipe.%3C/p%3E%3Cp%3EWell,%20this%20recipe%20yielded%20the%20taste%20of%20home%20(Mumbai)%20ladi-pav%20and%20has%20been%20a%20favorite%20at%20home.%20Street%20food%20of%20Mumbai%20became%20famous%20again%20in%20our%20small%20home%20in%20the%20US%20:)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EAdd%20the%20sugar%20and%20yeast%20to%20luke%20warm%20water%20and%20stir%20well.%20Keep%20it%20aside%20in%20a%20warm%20place%20to%20get%20the%20yeast%20proofed%20(to%20froth)%20-%20this%20should%20take%20about%2010%20to%2015%20minutes.%20If%20the%20yeast%20does%20not%20froth,%20then%20discard%20this%20mixture%20and%20try%20again.%3C/p%3E%3Cp%3EMelt%20the%20butter%20and%20add%20warm%20milk%20to%20it.%20Mix%20this%20well%20and%20let%20it%20come%20to%20room%20temperature.%20add%20this%20mixture%20along%20with%20salt%20to%20the%20fermented%20yeast%20mixture.%20Add%20the%20flour,%201%20cup%20at%20a%20time%20to%20this%20mixture%20to%20form%20a%20sticky%20dough.%3C/p%3E%3Cp%3EDust%20a%20clean%20surface%20with%20some%20generous%20amount%20of%20flour%20and%20knead%20the%20dough%20for%20about%2010%20minutes%20till%20it%20becomes%20soft%20and%20smooth.%20Put%20this%20dough%20into%20a%20large%20bowl%20and%20cover%20with%20a%20plastic%20wrap%20and%20let%20it%20rise%20in%20warm%20and%20dry%20place%20for%20about%20an%20hour.%20Once%20the%20dough%20has%20doubled,%20punch%20it%20to%20remove%20all%20the%20extra%20air%20and%20knead%20it%20again%20very%20well.%20Divide%20the%20dough%20into%2016%20equal%20parts%20and%20roll%20each%20part%20into%20a%20smooth%20ball.%3C/p%3E%3Cp%3EGrease%20a%20baking%20dish%20(I%20used%20a%20square%20cake%20dish)%20with%20oil%20and%20place%20these%20dough%20balls%20into%20the%20dish%20about%201/2%20inch%20apart.%20Cover%20with%20a%20plastic%20wrap%20and%20let%20them%20stand%20for%20about%201%20hour%20for%20a%20second%20raise.%20Once%20the%20dough%20rises,%20you%20will%20see%20that%20the%20dough%20balls%20have%20doubled%20in%20size%20and%20are%20sticking%20to%20each%20other.%20Glaze%20the%20tops%20of%20these%20pavs%20with%20some%20milk%20that%20is%20brushed%20gently%20-%20this%20is%20to%20give%20it%20a%20nice%20shine.%20You%20can%20do%20this%20glaze%20with%20eggs%20too.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20Fahrenheit%20and%20bake%20the%20pavs%20for%20about%2025-30%20minutes.%3C/p%3E%3Cp%3EOnce%20done,%20let%20it%20cook%20and%20then%20pull%20it%20apart%20to%20get%20individual%20pavs.%20Relish%20with%20bhaji,%20vada,%20maska%20or%20just%20dip%20it%20in%20tea%20and%20enjoy%20the%20yummy%20softness.%3C/p%3E){kind=link}
