.%20My%20other%20daughter%20is%20lactose%20intolerant,%20has%20decided%20to%20eat%20gluten%20free%20and%20has%20slowly%20become%20a%20vegetarian.%20Sir%20Sportsalot%20wasn't%20home%20that%20night.%20My%20take?%20I'll%20tell%20you%20in%20a%20minute.%3C/p%3E%3Cp%3EBtw,%20if%20you%20don't%20know%20what%20I'm%20doing....I'm%20cooking%20something%20from%20each%20of%20the%20celebrity%20chefs%20that%20some%20friends%20over%20on%20my%20Facebook%20Page,%20PeacefulCooking%20had%20listed%20as%20their%20favorite%20chefs.%20My%20next%20post%20will%20be%20a%20recipe%20from%20Jacques%20Pepin.%3C/p%3E%3Cp%3EBack%20to%20the%20chicken%20pot%20pie.%20I%20cut%20the%20recipe%20in%20half%20and%20baked%20them%20in%20single%20serving%20bowls.%20With%20the%20girls%20grown%20(still%20living%20at%20home)%20and%20gone%20most%20of%20the%20time,%20I'm%20trying%20to%20teach%20myself%20how%20to%20cook%20less%20food.%20What%20a%20challenge%20that%20is!%20Anyway...I%20still%20had%20some%20%22filling%22%20leftover%20so%20I%20froze%20it%20for%20next%20time.%20Even%20though%20I%20cut%20the%20recipe%20in%20half,%20I'm%20going%20to%20share%20the%20full%20version%20recipe%20with%20you.%20Paula%20say's%20this%20will%20serve%204%20people.%20I%20believe%20it%20could%20serve%20up%20to%206,%20but%20that%20depends%20on%20the%20appetites%20of%20those%20you're%20feeding.%3C/p%3E%3Cp%3ELady%20and%20Sons%20Chicken%20Pot%20Pie%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20350'%3C/p%3E%3Cp%3ECut%20your%20puff%20pastry%20into%201%22%20strips%20so%20they're%20a%20little%20longer%20than%20your%20baking%20dish%20(if%20you're%20making%20individual%20servings%20then%20cut%20the%20strips%20thinner%20to%20accommodate%20the%20size%20of%20the%20bowl).%20On%20a%20cookie%20sheet%20you're%20going%20to%20weave%20the%20strips%20together:%3C/p%3E%3Cp%3ELay%20out%20the%20vertical%20row.%20Then%20fold%20back%20every%20other%20strip%20halfway.%20Lay%20a%20strip%20in%20the%20middle%20horizontally.%20Take%20the%20strips%20you%20folded%20back%20and%20lay%20them%20flat%20again.%3C/p%3E%3Cp%3ENow%20take%20the%20opposite%20vertical%20strips%20and%20fold%20them%20back.%20Lay%20another%20strip%20horizontally.%20Take%20the%20folded%20back%20strips%20and%20lay%20them%20flat%20again.%20Continue%20this%20until%20you've%20reached%20the%20end.%3C/p%3E%3Cp%3EThen%20repeat%20the%20process%20going%20the%20other%20direction.%20I%20hope%20this%20helps....%3C/p%3E%3Cp%3E**If%20you%20don't%20want%20to%20go%20through%20all%20that,%20then%20just%20take%20the%20strips%20and%20lay%20them%20across%20each%20other%20without%20weaving.%3C/p%3E%3Cp%3EMake%20as%20many%20lattices%20as%20needed.%3C/p%3E%3Cp%3EBrush%20your%20lattices%20with%20the%20beaten%20egg.%3C/p%3E%3Cp%3EBake%20for%20about%205%20minutes,%20until%20the%20dough%20rises%20and%20turns%20a%20light%20golden%20brown.%20Set%20aside.%3C/p%3E%3Cp%3E(after%205%20minutes%20in%20the%20oven,%20mine%20still%20weren't%20brown%20so%20I%20had%20to%20stick%20them%20back%20in)%3C/p%3E%3Cp%3EFor%20the%20filling,%20season%20your%20chicken%20with%20salt,%20pepper%20and%20garlic.%20I%20cut%20up%20my%20chicken%20before%20hand%20but%20you%20can%20either%20saute%20them%20in%20the%20oil%20whole,%20or%20cut%20up.%20Either%20way,%20saute%20the%20chicken%20in%20a%20large%20skillet%20with%20high%20sides%20until%20cooked.%20Cut%20them%20into%20chunks%20if%20you%20didn't%20do%20so%20before%20cooking%20and%20set%20aside.%3C/p%3E%3Cp%3EDrain%20out%20the%20oil%20and%20melt%20the%20butter%20in%20the%20skillet.%20Slowly%20add%20in%20the%20flour,%20stirring%20constantly.%20Don't%20let%20it%20turn%20brown.%20Slowly%20stir%20in%20the%20cream%20until%20fully%20incorporated%20and%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20base%20or%20bullion,%20the%20garlic%20and%20onions.%20Stir%20until%20thickened.%20Add%20your%20veggies%20and%20cooked%20chicken.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20divide%20the%20filling%20into%20oven%20proof%20bowls%20or%20casserole%20dishes.%20Lay%20your%20puff%20pastry%20on%20top%3C/p%3E%3Cp%3EPlace%20on%20a%20baking%20sheet%20in%20order%20to%20catch%20any%20spills.%20Bake%20in%20a%20350'%20oven%20for%20about%205%20minutes%20or%20so,%20until%20nice%20and%20bubbly.%3C/p%3E%3Cp%3ENow...my%20take%20on%20this%20dish.%20I%20LOVE%20the%20puff%20pastry.%20The%20filling%20is%20a%20bit%20rich.%20You%20can%20use%20half%20and%20half%20or%20just%20plain%20milk%20to%20tone%20it%20down%20or%20%22lighten%22%20it%20up.%20You%20can%20add%20a%20little%20more%20milk%20or%20cream%20to%20get%20the%20consistency%20you%20like.%20The%20flavor%20was%20wonderful.%20I%20love%20making%20them%20into%20individual%20serving%20sizes.%20Although%20for%20me...one%20bowl%20was%20enough%20for%20two%20dinners...it%20was%20that%20filling!%3C/p%3E%3Cp%3EThis%20dish%20is%20quick%20and%20easy.%20Especially%20if%20you%20were%20to%20use%20leftover%20chicken.%20It's%20hearty%20and%20filling...perfect%20for%20those%20cold%20winter%20nights%20coming%20up.%3C/p%3E){kind=link}
