%20for%20Burns%20Night%20on%20the%2026th%20of%20February%20,%20many%20of%20the%20cheaper%20versions%20are%20made%20with%20pork%20offal%3C/p%3E%3Cp%3EI%20dutifully%20schlepped%20around%20two%20farmers%20markets,%20the%20main%20town%20market,%20three%20butchers%20but%20finally%20tracked%20one%20down%20with%20the%20requisite%20ingredients%20,%20lamb%20,%20plenty%20of%20spices%20and%20pinhead%20oatmeal.%20For%20Burns%20Night%20I%20served%20the%20haggis%20traditionally,%20after%20boiling%20for%20an%20hour%20and%20a%20half%20with%20mashed%20swede%20(neeps)%20and%20potatoes%20(tatties).%3C/p%3E%3Cp%3EIt%20was%20a%20very%20large%20haggis%20(%20over%20a%20kilo)%20%20and%20so%20we%20had%20plenty%3C/p%3E%3Cp%3Eleftover%20as%20I%20was%20%20reading%20the%20spice%20list%20thinking%20I%20might%20have%20a%20go%20at%3C/p%3E%3Cp%3Emaking%20my%20own%20next%20year,%20spiced%20including%20mace,%20coriander%20%20and%20nutmeg%3C/p%3E%3Cp%3Eare%20actually%20quite%20middle%20eastern.%20I%20remembered%20a%20recipe%20in%20the%20Moro%20cookbook%20for%20a%20flatbread%20,%20topped%20with%20spiced%20minced%20lamb%20,%20fresh%20pomegranate%20seeds%20and%20pinenuts.%20I%20figured%20leftover%20cooked%20haggis%20would%20be%20a%20great%20substitute%20for%20the%20minced%20lamb%20and%20still%20have%20a%20few%20pomegranates%20leftover%20from%20Christmas%20(%20wrinkled%20but%20still%20good)%3C/p%3E%3Cp%3EMaking%20a%20batch%20of%20the%20dough%20was%20easy,%20just%20five%20minutes%20kneading%20(with%20an%20hours%20proving)%20and%20once%20topped%20with%20the%20haggis%20the%20flatbreads%20cooked%20in%2015%20minutes.%3C/p%3E%3Cp%3EI%20dare%20anyone%20not%20to%20love%20this%20dish,%20%20the%20oatmeal%20had%20just%20begun%20to%20toast%20%20mixed%20with%20and%20spicy%20braised%20meat,%20you%20would%20never%20guess%20was%20offal.%3C/p%3E%3Cp%3EI%20served%20it%20with%20some%20baba%20ganoush%20(%20roasted%20aubergine%20and%20garlic%20,%20mixed%20with%20yoghurt,%20lemon%20juice%20&%20coriander%20)%20but%20some%20plain%20yogurt%20or%20labneh%20would%20be%20great.%3C/p%3E%3Cp%3ELamb%20Haggis%20and%20Pomegranate%20Flatbreads%3C/p%3E%3Cp%3EQuarters%20of%20fresh%20lemon.%3C/p%3E%3Cp%3ETo%20assemble%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20230degC%3C/p%3E%3Cp%3EWarm%20the%20haggis%20through%20and%20mix%20with%20the%20pomegranate%20molasses%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%2012%20pieces,%20roll%20each%20piece%20out%20to%20approx%2015cm%20diameter%20,%20(%200.25cm%20thick)%3C/p%3E%3Cp%3ETop%20each%20flatbread%20with%20a%20generous%20smear%20(1%20heaped%20tbsp)%20of%20haggis)%3C/p%3E%3Cp%3EPlace%20in%20the%20oven%20for%2012-15%20minutes%20until%20risen%20and%20just%20beginning%20to%20brown%3C/p%3E%3Cp%3EServe%20with%20a%20scattering%20of%20coriander%20leaves,%20pomegranate%20seeds%20and%20a%20squeeze%20of%20lemon%20juice.%3C/p%3E%3Cp%3EThis%20entry%20was%20posted%20in%20Uncategorized.%20Bookmark%20the%20permalink.%3C/p%3E){kind=link}
