%20and%20let%20it%20hang%20out%20in%20the%20fridge%20for%20at%20least%2030%20minutes%20or%20a%20few%20hours,%20soaking%20in%20all%20those%20lovely,%20fresh%20spices.%20I%20then%20grilled%20the%20chicken%20(yes...all%20by%20myself....which%20is%20always%20an%20adventure).%3C/p%3E%3Cp%3E(I%20apologize%20for%20the%20horrible%20picture.%20I%20don't%20know%20what%20my%20issue%20was%20that%20day...probably%20frazzled%20from%20dealing%20with%20the%20bbq)%3C/p%3E%3Cp%3EThen%20I%20proceeded%20to%20make%20the%20most%20yummy%20quesadillas%20ever!!%3C/p%3E%3Cp%3E(and%20another%20horrible%20pic)%3C/p%3E%3Cp%3EBut%20seriously...with%20some%20sauteed%20onions%20and%20bell%20peppers...a%20few%20slices%20of%20avocado%20and%20lots%20of%20cheese....not%20to%20mention%20the%20wonderfully%20tender%20and%20succulent%20chicken....this%20was%20one%20mighty%20tasty%20quesadilla.%3C/p%3E%3Cp%3EJust%20a%20note....if%20you're%20taking%20the%20time%20to%20fire%20up%20the%20grill%20to%20cook%20the%20meat,%20do%20yourself%20a%20favor%20and%20grill%20the%20quesadillo%20as%20well.%20It%20adds%20such%20a%20wonderful%20flavor!%3C/p%3E%3Cp%3EOf%20course%20I%20did%20use%20the%20other%20packet%20to%20make%20actual%20guacamole.%3C/p%3E%3Cp%3EQuick%20and%20easy%20with%20wonderful%20results!%20All%20you%20need%20are%20the%20avocados.%20The%20Dip%20Creations%20does%20the%20rest.%20Not%20too%20spicy%20for%20those%20who%20like%20it%20mild.%20If%20you%20want%20heat....add%20your%20own%20:)...I'm%20sure%20the%20avocado%20won't%20mind.%3C/p%3E%3Cp%3EPlease,%20don't%20buy%20the%20pre-made%20guacamole%20in%20the%20deli%20section%20of%20your%20grocery%20store.%20It%20rarely%20tastes%20anything%20at%20all%20like%20guacamole%20(seriously).%20If%20you%20don't%20like%20guacamole,%20it%20could%20be%20because%20you've%20only%20had%20that%20processed,%20flavorless,%20weird%20stuff%20that%20comes%20in%20a%20plastic%20container.%20Even%20the%20texture%20is%20funky.%20If%20you%20ever%20see%20it%20at%20a%20party.....run%20away....fast.%20Don't%20let%20your%20lips%20or%20chips%20come%20in%20contact%20with%20the%20stuff.%20Grocery%20store%20brand,%20pre-made%20guacamole%20is%20that%20bad!%3C/p%3E%3Cp%3EPromise%20me....if%20you're%20not%20going%20to%20make%20it%20from%20scratch....at%20least%20buy%20a%20packet%20of%20Lay's%20Dip%20Creations%20Freshly%20Made%20Guacamole%20mix,%20a%20few%20avocados,%20and%20smash%20them%20all%20together.%20Stick%20it%20in%20the%20fridge%20for%20an%20hour%20and%20enjoy.%20It's%20that%20simple%3C/p%3E%3Cp%3ENow...what%20did%20I%20do%20with%20Garden%20Onion%20packet.....%3C/p%3E%3Cp%3EDid%20I%20add%20it%20to%20the%20burger%20patty?%3C/p%3E%3Cp%3ENope%3C/p%3E%3Cp%3EDid%20I%20add%20it%20to%20the%20fries?%3C/p%3E%3Cp%3ENope.....%3C/p%3E%3Cp%3EI%20added%20it%20to%20the%20bun!%20I%20made%20a%20small%20batch%20of%20No-Knead%20Olive%20Oil%20dough%20and%20tossed%20in%20the%20whole%20packet.%3C/p%3E%3Cp%3EI%20was%20originally%20going%20to%20make%20focaccia.%20Add%20some%20grilled%20onions%20on%20top%20before%20baking.%20But%20I%20forgot.%20Or%20subconsciously%20changed%20my%20mind.%20I%20had%20some%20Italian%20Sausage%20that%20needed%20to%20be%20used%20so%20I%20thought%20I'd%20remove%20the%20casings%20and%20make%20them%20into%20burgers.%3C/p%3E%3Cp%3ESo...I%20needed%20the%20buns.%3C/p%3E%3Cp%3EThis%20recipe%20is%20adapted%20from%20Artisan%20Bread%20in%20Five%20Minutes%20a%20Day%3C/p%3E%3Cp%3EIn%20a%20non-airtight%20container,%20with%20a%20lid,%20combine%20the%20water,%20yeast,%20salt,%20sugar,%20olive%20oil%20and%20Garden%20Onion%20packet.%20Add%20the%20flour%20and%20stir%20until%20combined.%20Do%20not%20knead.%20Cover%20lightly%20with%20a%20lid%20and%20let%20sit%20on%20the%20counter%20for%202%20hours%3C/p%3E%3Cp%3EI%20love%20seeing%20all%20that%20speckled%20flavor%20running%20through%20the%20dough.%3C/p%3E%3Cp%3EOnce%20the%202%20hours%20are%20up,%20%20you%20can%20either%20refrigerate%20the%20dough%20or%20continue%20on%20to%20make%20the%20burger%20buns.%20I%20find%20that%20it%20is%20a%20bit%20easier%20to%20work%20with%20if%20the%20dough%20is%20allowed%20to%20chill-out%20in%20the%20fridge%20first.%20It's%20not%20as%20'sticky'.%3C/p%3E%3Cp%3EEither%20way,%20you're%20going%20to%20work%20the%20dough%20into%20a%20ball%20by%20holding%20it%20in%20your%20hands%20and%20stretching%20the%20dough%20around%20to%20the%20bottom%20as%20your%20rotate%20it.%20Then%20divide%20the%20ball%20into%206%20equal%20portions%20(about%203%20oz%20each).%20Shape%20each%20portion%20into%20a%20ball%20as%20your%20did%20before,%20adding%20a%20small%20amount%20of%20flour%20if%20needed.%20Place%20them%20on%20a%20parchment%20paper%20lined%20cookie%20sheet%20and%20just%20barely%20flatten%20them%20a%20bit.%3C/p%3E%3Cp%3ECover%20with%20plastic%20wrap%20and%20a%20let%20rise%20for%2040%20minutes.%20(if%20you%20didn't%20refrigerate%20the%20dough,%20they%20only%20need%2020%20minutes%20to%20rise).%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350'%20(if%20you're%20using%20a%20baking%20stone...the%20preheat%20time%20is%2030%20minutes%20before%20baking.%20If%20no%20baking%20stone%20is%20used,%20you%20only%20need%20about%205%20minutes%20to%20preheat).%3C/p%3E%3Cp%3EJust%20before%20baking,%20brush%20the%20tops%20with%20melted%20butter.%20Bake%20for%2020%20minutes%20or%20until%20richly%20browned%20and%20firm.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20my%20buns%20didn't%20brown.%20I%20even%20let%20them%20bake%20a%20bit%20longer.%20The%20buttoms%20browned%20just%20fine%20but%20the%20tops%20decided%20to%20be%20a%20bit%20stubborn.%20I%20didn't%20stress%20over%20it%20much.%20Maybe%20my%20burgers%20can%20be%20considered%20%22White%20Burgers%22....turkey%20meat%20and%20pale%20buns.%20With%20a%20big%20ole%20slab%20of%20mozzarella%20cheese%20melted%20over%20that%20Italian%20Sausage%20patty....and%20some%20grilled%20onions%20in%20there....%3C/p%3E%3Cp%3EYes....it%20was%20a%20great%20burger....from%20patty%20to%20bun.%20I%20loved%20the%20addition%20of%20Lay's%20Seasoning%20Mix%20to%20the%20dough%20and%20plan%20on%20doing%20that%20again.%3C/p%3E%3Cp%3EThank%20you%20Lay's%20for%20this%20opportunity%20to%20play%20with%20your%20Dip%20Creations.%3C/p%3E%3Cp%3ENo,%20I%20have%20not%20forgotten%20about%20the%20Country%20Ranch.%20But%20you%20see....ranch%20dressing%20is%20my%20favorite.%20And%20I'm%20just%20going%20to%20use%20the%202%20seasoning%20mix%20packets%20that%20I%20have%20to%20make%20just%20that....Country%20Ranch%20Dressing.%20To%20dip%20my%20fries%20in.%20To%20pour%20over%20my%20salad.%20Even%20to%20dip%20my%20pizza%20in.%20I%20am%20a%20true%20blue%20ranch%20dressing%20kinda%20gal.%3C/p%3E){kind=link}
