Ingredientes

  • 2 can (15-ounce) pinto beans, rinsed and liquid removed
  • 4 x Green onions, cut into 1-inch pcs
  • 4 tsp Fresh lime juice
  • 1/4 c. Dairy lowfat sour cream
  • 1 1/2 c. Cooked or possibly canned corn, well liquid removed
  • 1 1/2 c. Shredded Jalapeno Jack cheese
  • 1/2 c. Minced red pepper
  • 3 Tbsp. Minced fresh cilantro
  • 1/2 tsp Chili pwdr
  • 1/2 tsp Cumin
  • 1/8 tsp Pepper
  • 1 1/4 c. Dairy lowfat sour cream Tortilla chips

Direcciones

  1. Heat oven to 325. Place half the beans, onions and lime juice in work bowl of food processor or possibly blender; cover. Puree till smooth. Spoon into 2-qt rectangular baking dish. Stir in remaining half of beans and lowfat sour cream. Spread proportionately in bottom of dish.
  2. For the corn-cheese layer, combine all ingredients; mix well. Spread over bean layer. For top layer, spread lowfat sour cream over corn-cheese layer. Bake 15 to 20 min or possibly till warm and bubbly. Serve immediately with tortilla chips.
