Ingredientes

  • 2 c. whipping cream
  • 1 sm vanilla bean
  • 1/2 c. granulated sugar
  • 4 x egg yolks brown sugar

Direcciones

  1. Heat cream to boiling point with vanilla bean. Mix sugar and egg yolks.
  2. Remove vanilla bean from cream; gradually whisk in egg mix. Pour into buttered custard c.; bake in bain marie (pan of warm water) in 250F oven about 1 to 11/2 hrs, till set around edges. Remove from bain marie; cold and chill.
  3. Before serving, sieve brown sugar over top. Place under broiler for a few seconds till sugar bubbles. (Watch carefully so topping doesn't burn.)
