I’ve been meaning to get myself to Le Maquis ever since it was chosen as Le Fooding’s top bistro in Paris late last year. Bistro culture in the city has been on a downswing as international influences come out to play. The proof was in Le Maquis’ competition: Cheval d’Or and Cuisine (review forthcoming on Paris by Mouth) were both in the running as well, the former boasting a pan-Asian/Chinese accent and the latter Japanese sensibility.

%20were%20both%20in%20the%20running%20as%20well,%20the%20former%20boasting%20a%20pan-Asian/Chinese%20accent%20and%20the%20latter%20Japanese%20sensibility.%3C/p%3E%3Cp%3EIt%20was%20thus%20with%20an%20open%20mind%20and%20a%20keen%20desire%20for%20something%20typically%20French%20that%20I%20ventured%20to%20Le%20Maquis,%20which%20offers%20only-slightly-revisited%20classic%20bistro%20cuisine.%20Picture%20a%20French%20grandma%E2%80%99s%20favorite%20dishes%20in%20smaller%20portions%20and%20dressed%20up%20with%20top-quality%20ingredients.%20Finish%20things%20off%20with%20typical%20d%C3%A9cor%20including%20a%20tiled%20floor,%20zinc%20bar,%20and%20red%20leather%20banquettes,%20and%20Le%20Maquis%20looks%20like%20everything%20a%20good%20bistro%20should%20be.%3C/p%3E%3Cp%3EThings%20started%20off%20strong,%20with%20a%20short-and-sweet%20selection%20of%20natural%20wines%20by%20the%20glass.%20The%20reasonably-priced%20Chablis%20(6%20euro,%20left)%20boasted%20a%20rich%20pineapple%20aroma,%20while%20the%20cloudier%20Melon%20de%20Bourgogne%20from%20Nantes%20(6%20euro,%20right)%20had%20a%20powerful%20minerality%20and%20a%20salinity%20that%20almost%20made%20you%20feel%20like%20you%20were%20sipping%20it%20while%20overlooking%20the%20crashing%20waves%20of%20the%20Atlantic.%3C/p%3E%3Cp%3EThe%20first%20dish,%20too,%20was%20pitch-perfect:%20tender%20leeks%20in%20a%20tangy%20vinaigrette%20dusted%20with%20grated%20feta%20cheese%20and%20baby%20mint%20leaves.%20It%20was%20one%20of%20two%20appetizer%20choices%20on%20the%20almost%20criminally%20reasonable%2016-euro%20two-course%20lunch%20deal%20(three%20courses%20for%2018%20euro).%20It%20also%20may%20well%20have%20been%20the%20best%20dish%20of%20the%20day.%3C/p%3E%3Cp%3EThe%20other%20appetizer%20had%20some%20unfortunate%20false%20notes.%20These%20mussels%20in%20a%20spiced%20marini%C3%A8re%20broth%20were%20flavorful,%20but%20half%20of%20them%20arrived%20closed.%20And%20while%20I%E2%80%99m%20not%20usually%20one%20to%20expect%20American%20customer%20service%20in%20France,%20no%20effort%20was%20made%20to%20rectify%20the%20problem,%20either%20by%20replacing%20them%20or%20taking%20them%20off%20the%20bill.%3C/p%3E%3Cp%3EMains%20were%20decidedly%20fine.%20This%20yellow%20chicken%20supreme%20was%20tender,%20juicy,%20and%20perfectly%20cooked,%20and%20the%20sauce%20and%20polenta%20were%20tasty,%20but%20the%20dish%20was%20just%20slightly%20underseasoned,%20and%20the%20choice%20to%20pair%20it%20with%20both%20endive%20and%20fried%20sage%20leaves%20lent%20a%20one-two%20punch%20that%20that%20even%20I,%20a%20lover%20of%20all%20things%20bitter,%20found%20slightly%20overpowering.%3C/p%3E%3Cp%3EThe%20sauce,%20it%20must%20be%20said,%20was%20divine.%3C/p%3E%3Cp%3EThe%20skate%20wing,%20meanwhile,%20was%20served%20with%20a%20puttanesca-esque%20combo%20of%20tomato,%20potato,%20spinach,%20tomato,%20and%20caper.%20It%20was%20perfectly%20fine.%3C/p%3E%3Cp%3EAnd%20I%20don%E2%80%99t%20think%20I%20mean%20that%20as%20a%20slight.%3C/p%3E%3Cp%3EI%E2%80%99m%20constantly%20on%20the%20lookout%20for%20good%20classic%20French%20bistros%20in%20the%20city,%20particularly%20for%20out-of-town%20visitors.%20While%20I%20love%20myself%20a%20fusion%20or%20contemporary%20dish,%20I%20also%20know%20that%20many%20people%20come%20to%20the%20city%20to%20try%20bistro%20cuisine.%20And%20there%E2%80%99s%20something%20to%20be%20said%20for%20simple%20French%20food%20done%20up%20right.%3C/p%3E%3Cp%3EI%E2%80%99d%20be%20interested%20to%20see%20what%20Le%20Maquis%20does%20at%20night:%20with%20more%20choice%20(and%20higher%20prices)%20as%20well%20as%20the%20offal-heavy%20menu%20I%20know%20it%20to%20boast,%20it%E2%80%99s%20possible%20that%20this%20restaurant%20could%20move%20from%20fine%20to%20fantastic.%20As%20it%20is,%20I%20remain%20curious%20but%20not%20blown%20away.%3C/p%3E%3Cp%3ELe%20Maquis%20%E2%80%93%2053%20Rue%20des%20Cloys,%2075018%3C/p%3E){kind=link}
