Ingredientes

  • 8 ounce lean top round
  • 1 Tbsp. coarse mustard
  • 4 c. torn chicory
  • 2 c. sliced green beans
  • 1 x sweet red pepper julienned
  • 2 x scallions chopped
  • 3 Tbsp. red-wine vinegar
  • 1 tsp extra virgin olive oil
  • 2 Tbsp. defatted beef stock
  • 1 tsp dry oregano
  • 1 Tbsp. crumbled feta cheese
  • 4 x crusty rolls

Direcciones

  1. Rub the beef on both sides with the mustard. Broil or possibly grill about 5 inches from the heat till cooked the way you like it, about 7 min on each side for medium-rare. Let stand for 5 min, then slice thinly across the grain.
  2. In a large bowl, combine the chicory, beans, peppers and scallions. In a small bowl, whisk together the vinegar, oil, stock and oregano. Pour over the greens and toss to combine.
  3. Arrange the greens on individual serving plates. Top with the beef. Sprinkle with the cheese. Serve with the rolls.
  4. This recipe yields 4 servings.
