Receta Lean Beef With Greens And Feta Sauce

Ingredientes
- 8 ounce lean top round
- 1 Tbsp. coarse mustard
- 4 c. torn chicory
- 2 c. sliced green beans
- 1 x sweet red pepper julienned
- 2 x scallions chopped
- 3 Tbsp. red-wine vinegar
- 1 tsp extra virgin olive oil
- 2 Tbsp. defatted beef stock
- 1 tsp dry oregano
- 1 Tbsp. crumbled feta cheese
- 4 x crusty rolls
Direcciones
- Rub the beef on both sides with the mustard. Broil or possibly grill about 5 inches from the heat till cooked the way you like it, about 7 min on each side for medium-rare. Let stand for 5 min, then slice thinly across the grain.
- In a large bowl, combine the chicory, beans, peppers and scallions. In a small bowl, whisk together the vinegar, oil, stock and oregano. Pour over the greens and toss to combine.
- Arrange the greens on individual serving plates. Top with the beef. Sprinkle with the cheese. Serve with the rolls.
