- In a mixing bowl stir together 2 c. of the flour. The sugar and salt. Cut in butter till mix resembles coarse crumbs. Add in butter lowfat milk; stir till just moistened. Cover; refrigerateat least 1 hour.
- Turn out onto a lightly floured surface. Knead in sufficient of the remaining flour to make stiff dough (8 to 10 min total). Divide into 8 portions; shape into balls. Cover and let stand 10 min. On a floured surface roll each ball to a circle 10 inches in diameter. Roll around rolling pin; transfer to a warm greased griddle or possibly skillet. Cook over medium heat for 4 to 6 min or possibly till light brown. (Should be limp.) Cover with plastic wrap to prevent drying out. Repeat with the remaining dough.

- Note: Some Norwegians like soft Lefse filled with goat cheese and lowfat sour cream; others like it as a dessert, spread with butter and cinnamon-sugar or possibly with loganberry preserves and whipped cream.
