%20To%20a%20lot%20of%20people,%20cooking%20is%20work%20and%20there%20will%20always%20be%20people%20who%20see%20my%20time%20in%20the%20kitchen%20as%20work%20-%20but%20for%20me,%20it's%20a%20hobby%20and%20one%20I%20enjoy%20and%20would%20never%20willingly%20give%20up.%20Might%20sound%20strange%20to%20many%20people%20-%20probably%20not%20my%20readers%20since%20most%20of%20you%20are%20foodies%20like%20me.%3C/p%3E%3Cp%3EI%20guess%20it%20comes%20down%20to%20the%20saying,%20%22to%20each%20his%20own%22.%20I%20know%20people%20who%20love%20running%20marathons.%20I%20don't%20get%20it.%20All%20that%20time%20and%20training%20-%20and%20all%20those%20miles...%20I'm%20all%20for%20exercising%20to%20stay%20healthy,%20just%20like%20I'm%20sure%20marathon%20runners%20are%20all%20for%20food%20to%20stay%20nourished,%20but%20marathons%20are%20to%20me%20what%20The%20French%20Laundry%20cookbook%20must%20be%20to%20others.%3C/p%3E%3Cp%3EAnyway,%20I'm%20rambling.%20It's%20my%20love%20of%20cooking%20that%20always%20leads%20me%20to%20seek%20out%20new%20recipes%20and%20I%20was%20pretty%20psyched%20to%20find%20this%20one%20for%20lemon%20bars.%20In%20my%20little%20kitchen%20in%20Fanwood,%20I%20was%20able%20to%20bake%20up%20a%20fresh%20batch%20of%20sunshine.%20That's%20exactly%20what%20each%20of%20these%20sweet,%20tart%20bars%20tastes%20like:%20pure%20sunshine.%20When%20was%20the%20last%20time%20your%20hobby%20let%20you%20create%20sunshine?%3C/p%3E%3Cp%3EThis%20recipe%20is%20from%20the%20Barefoot%20Contessa%20cookbook%20-%20I%20followed%20it%20exactly%20(surprising,%20I%20know!).%20I%20did%20have%20to%20bake%20mine%20a%20bit%20longer%20but%20I%20think%20that's%20just%20because%20my%20oven%20has%20a%20mind%20of%20it's%20own.%3C/p%3E%3Cp%3ELemon%20Bars%3C/p%3E%3Cp%3Efrom%20the%20Barefoot%20Contessa%20Cookbook%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EFor%20the%20crust,%20cream%20the%20butter%20and%20sugar%20until%20light%20in%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20the%20paddle%20attachment.%20Combine%20the%20flour%20and%20salt%20and,%20with%20the%20mixer%20on%20low,%20add%20to%20the%20butter%20until%20just%20mixed.%20Dump%20the%20dough%20onto%20a%20well-floured%20board%20and%20gather%20into%20a%20ball.%20Flatten%20the%20dough%20with%20floured%20hands%20and%20press%20it%20into%20a%209%20by%2013%20by%202-inch%20baking%20sheet,%20building%20up%20a%201/2-inch%20edge%20on%20all%20sides.%20Chill.%3C/p%3E%3Cp%3EBake%20the%20crust%20for%2015%20to%2020%20minutes,%20until%20very%20lightly%20browned.%20Let%20cool%20on%20a%20wire%20rack.%20Leave%20the%20oven%20on.%3C/p%3E%3Cp%3EFor%20the%20filling,%20whisk%20together%20the%20eggs,%20sugar,%20lemon%20zest,%20lemon%20juice,%20and%20flour.%20Pour%20over%20the%20crust%20and%20bake%20for%2030%20to%2035%20minutes,%20until%20the%20filling%20is%20set.%20Let%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3ECut%20into%20triangles%20and%20dust%20with%20confectioners'%20sugar.%3C/p%3E){kind=link}
