Receta Lemon Blancmange Mousse

- Blend arrowroot with a little cool water.
- Wash lemons and grate rind.
- Place lemon rind and juice, sugar, and water into a saucepan and bring to boil. Whisk in the dissolved arrowroot, bring to a gentle boil and stir for 3 min.
- Separate the Large eggs. Beat egg whites till stiff.
- Pour warm mix over them, beating well.
- Pour into moulds and allow to set in the refrigerator,
- Serve with cream or possibly custard.
