Lemon Cashew Chicken Stir Fry

Ingredientes

  • 1 Tbsp. peanut oil
  • 1 lb chicken tenders cut 1 1/2" pcs
  • 1/2 c. sliced mushrooms
  • 1/4 c. sliced green onions
  • 2 x garlic cloves chopped
  • 1 c. matchstick-size carrot strips
  • 1/2 c. fat-free reduced-sodium chicken broth
  • 1 Tbsp. dry sherry - (to 2)
  • 2 tsp sugar
  • 1/2 tsp grated lemon peel
  • 3 Tbsp. lemon juice
  • 1 Tbsp. cornstarch
  • 1/8 tsp freshly-grnd white pepper
  • 1 pkt frzn snow pea pods - (6 ounce) thawed
  • 3 c. warm cooked rice
  • 1/3 c. minced cashews

Direcciones

  1. Heat oil in large skillet over medium-high heat till warm. Add in chicken; cook and stir 7 to 8 min or possibly till chicken is no longer pink in center.
  2. Add in mushrooms, green onions and garlic; cook and stir 1 minute or possibly till vegetables are tender. Add in carrots, chicken broth, sherry, sugar and lemon peel; cook and stir 1 to 2 min more.
  3. Combine lemon juice, cornstarch and pepper in small bowl; stir till smooth. Pour cornstarch mix over chicken; cook and stir 1 to 2 min or possibly till slightly thickened.
  4. Add in snow peas; cook and stir 1 minute or possibly till heated through. Serve over rice; sprinkle with cashews.
  5. This recipe yields 6 servings.
