%20The%20trick%20is%20to%20use%20a%20very%20thin-bladed%20knife.%3C/p%3E%3Cp%3EThe%20other%20obstacle%20I%20have%20yet%20to%20overcome%20is%20the%20oven%20temperature.%20It%20was%20only%20last%20week%20that%20I%20realised%20all%20the%20while%20I%20have%20been%20baking%20with%20my%20not-so-up-to-standard%20table-top%20oven.%20First%20of%20all,%20it%20is%20a%20small%20oven,%20just%2020%20litres,%20compared%20to%20one%20that%20is%2040%20litres.%20It%20doesn't%20come%20with%20a%20fan,%20and%20it%20has%20only%20one%20set%20of%20heating%20element%20that%20is%20located%20on%20the%20top.%20Most%20good%20ovens%20come%20with%20two%20sets%20of%20heating%20elements,%20top%20and%20bottom,%20and%20with%20a%20fan%20for%20circulation%20which%20helps%20to%20create%20an%20even%20temperature.%20I%20would%20think%20my%20oven%20is%20just%20slightly%20better%20than%20a%20toaster%20oven.%20No%20wonder,%20I%20always%20have%20problem%20baking%20a%20chiffon%20cake.%20Without%20fail,%20the%20oven%20temperature%20will%20drop%20by%2020%20degC%20when%20the%20cake%20goes%20in,%20so%20I%20always%20had%20to%20set%20it%20higher%20than%20the%20recommended%20temperature.%20The%20cake%20will%20rise%20high%20over%20the%20rim%20during%20baking,%20however,%20close%20to%20the%20finishing%20time,%20it%20will%20start%20to%20shrink,%20even%20before%20I%20take%20it%20out%20of%20the%20oven.%20Sometimes%20I%20have%20to%20tent%20the%20top%20of%20the%20cake%20as%20my%20oven%20is%20so%20small%20that%20the%20top%20of%20the%20tube%20is%20not%20more%20than%202%20inches%20away%20from%20the%20heating%20element,%20while%20the%20bottom%20of%20the%20pan%20is%20only%201%20inch%20away%20from%20the%20base%20of%20the%20oven,%20not%20forgetting%20I%20am%20using%20a%20small%207%20in%22%20tube%20pan.%3C/p%3E%3Cp%3EAnyway,%20enough%20of%20complaining...with%20the%20ample%20supply%20of%20lemons%20in%20the%20fridge,%20I%20managed%20to%20bake%20a%20Lemon%20Chiffon%20Cake%20the%20other%20day.%20I%20didn't%20have%20time%20to%20search%20for%20a%20suitable%20recipe,%20so%20I%20tweaked%20my%20favourite%20Earl%20Grey%20Chiffon%20Cake%20recipe%20and%20turned%20it%20to%20a%20lemon%20flavoured%20cake.%3C/p%3E%3Cp%3EMy%20little%20experiment%20was%20a%20success.%20The%20texture%20of%20the%20cake%20was%20not%20affected,%20it%20was%20moist%20and%20tender.%20I%20like%20the%20mild%20and%20light%20lemony%20flavour%20which%20was%20not%20too%20tangy.%20It%20was%20great%20for%20breakfast,%20and%20was%20excellent%20served%20with%20a%20cup%20of%20afternoon%20tea.%3C/p%3E%3Cp%3ELemon%20Chiffon%20Cake%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E(makes%20one%2018cm%20cake)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ESieve%20flour,%20baking%20powder%20and%20salt%20together,%20set%20aside.%3C/p%3E%3Cp%3ESeparate%20egg%20yolks/whites%20and%20bring%20to%20room%20temperature.%20(It%20is%20easier%20to%20separate%20eggs%20when%20they%20are%20cold.)%3C/p%3E%3Cp%3EPlace%20egg%20yolks%20in%20a%20mixing%20bowl,%20add%20sugar%20in%203%20separate%20additions%20and%20with%20a%20manual%20whisk,%20whisk%20till%20the%20mixture%20becomes%20sticky%20and%20turns%20pale.%3C/p%3E%3Cp%3EDrizzle%20in%20the%20oil,%20whisking%20at%20the%20same%20time%20till%20the%20mixture%20is%20well%20combined.%20Repeat%20the%20same%20with%20the%20water,%20followed%20by%20the%20lemon%20juice.%20Sieve%20over%20the%20flour%20mixture%20and%20whisk%20until%20flour%20mixture%20is%20fully%20incorporated%20into%20the%20batter.%20Add%20in%20the%20lemon%20zest%20and%20mix%20well.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20mixing%20bowl,%20beat%20egg%20whites%20with%20an%20electric%20mixer%20until%20mixture%20becomes%20frothy%20and%20foamy.%20Gradually%20beat%20in%20the%20sugar%20and%20beat%20on%20high%20speed%20until%20%20just%20before%20stiff%20peaks%20form*%20(after%20note:%20after%20several%20attempts%20at%20baking%20chiffon%20cakes,%20I%20learned%20that%20the%20whites%20should%20be%20beaten%20until%20just%20before%20%20stiff%20peaks%20form).%3C/p%3E%3Cp%3EAdd%20the%20beaten%20egg%20white%20into%20the%20egg%20yolk%20batter%20in%203%20separate%20additions,%20each%20time%20folding%20gently%20with%20a%20spatula%20until%20just%20blended.%3C/p%3E%3Cp%3EPour%20batter%20into%20a%2018cm%20(7%20inch)%20tube%20pan%20(do%20not%20grease%20the%20pan).%20Tap%20the%20pan%20lightly%20on%20a%20table%20top%20to%20get%20rid%20of%20any%20trapped%20air%20bubbles%20in%20the%20batter.%3C/p%3E%3Cp%3EBake%20in%20pre-heated%20oven%20at%20170%20degC%20for%2045%20~%2050mins%20or%20until%20the%20cake%20surface%20turns%20golden%20brown,%20and%20a%20skewer%20inserted%20into%20the%20centre%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20invert%20the%20pan%20immediately.%20Let%20cool%20completely%20before%20unmould.%20To%20remove%20the%20cake%20from%20the%20pan,%20run%20a%20thin-bladed%20knife%20around%20the%20inside%20of%20the%20pan%20and%20the%20center%20core.%20Release%20the%20cake%20and%20run%20the%20knife%20along%20the%20base%20of%20the%20pan%20to%20remove%20the%20
