Lemon Garlic Scallops With Almonds

Ingredientes

  • 3 Tbsp. unsalted butter
  • 2 x cloves garlic, minced
  • 2 x 2 1/(2-oz) pkgs. slivered almonds (about 1 1/2 c.) Grated zest and juice of 1 lemon
  • 1 1/2 lb bay scallops, rinsed, liquid removed Salt and freshly grnd pepper
  • 3 Tbsp. minced fresh parsley

Direcciones

  1. Heat butter in large skillet over medium-high heat. Add in garlic; cook 1 minute. Stir in almonds, cook 1 minute. Remove to small bowl; fold in lemon zest.
  2. Set aside.
  3. Heat skillet over high heat; add in scallops. Allow to brown on one side, about 2 min. Stir in nut mix and lemon juice; cook, stirring, 1 minute. Season with salt and pepper. Stir in parsley.
