Ingredientes

  • 2 c. Unbleached flour
  • 1/2 c. Granulated sugar
  • 2 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1 c. Skim lowfat milk
  • 1 x Egg
  • 3 Tbsp. Canola oil
  • 1 tsp Grated lemon peel
  • 1 c. Fresh or possibly frzn blueberries
  • 1/2 c. Powdered sugar, sifted
  • 1 Tbsp. Lemon juice

Direcciones

  1. Heat oven to 400F. Coat 12 muffin c. with nonstick spray. Wisk flour, granulated sugar, baking pwdr and baking soda in a bowl. In another bowl, wisk lowfat milk, egg, oil and lemon peel. Stir in blueberries. Add in blueberry mix to dry ingredients and stir till moistened; divide batter among muffin c.. Bake till a toothpick inserted into center of a muffin comes out clean, about 20 min. Remove muffins from pan and place on a wire rack to cold. In a small bowl, combine powdered sugar and lemon juice. Drizzle over hot muffins. Serve muffins hot or possibly cooled.
