Ingredientes

  • to go with Buckwheat Fried Oysters, shown in this collection Makes 3 c.
  • 3/8 c. cornichons ***
  • 2 Tbsp. cornichon juice
  • 1/4 c. capers, liquid removed
  • 1 lrg shallot, peeled
  • 1 1/4 c. mayonnaise Grated peel of small lemon (yellow part only)
  • 1 Tbsp. lemon juice
  • 1 Tbsp. brandy
  • 1/4 c. minced chives
  • 1 1/2 Tbsp. grnd black pepper

  1. [Cornichons are pickles made of: Gherkins, water, vinegar, sugar, salt, spices

  3. Combine cornichons and juice, capers and shallot in bowl of food processor and pulse till chopped. Transfer to bowl and blend in mayonnaise, lemon peel and juice, brandy, chives and black pepper. Chill.
