Lemongrass Pork Soup

I loved this soup. It really was good for a cold.

Ingredientes

  • 2 Stalks Lemongrass, thinly sliced
  • 5 garlic cloves, coarsely chopped
  • 2 Tbl peeled, coarsely chopped galangal
  • 1 lrg Shallot, coarsely chopped
  • 1 Tbl chopped fresh cilantro
  • 4 kaffir limes leaves, deveined
  • 2/3 C water
  • 2.5lbs spareribs cut into 1 1/2 inch pieces across the bone, then cut between the bone
  • 5 C water
  • 3Tbl fish sauce
  • 1 1/2 Tbl salt
  • 12 Tbl sugar
  • 1 C tamarind juice (a hunk of tamarind melted in boiling water)
  • 1lb Chinese watercress

Direcciones

  1. To make a paste: Blend all the ingredients for paste in a blender until smooth, 2 to 3 minutes.
  2. Transfer the paste to a large pt, sir in the ribs and cook over medium high heat, stirring well, for 5 to 6 minutes. Add the water, fish sauce, salt and sugar and bring to a boil over high heat. When the soup has reached a boil, skim, reduce heat and simmer, partially covered, until the ribs are tender, about 1 1/4 hours.
  3. Stir in tamarind juice with the watercress remove from heat and serve in bowls.
