Lemony Pesto


This is a basic pesto recipe, but a added juice of one lemon & chopped walnuts instead of pine nuts because they are a lot less expensive. The lemon gives it a fresh flavor and keeps the pesto color from darkening when stored in fridge.

Ingredientes

  • 3 large cloves garlic
  • 1/4 cup chopped walnuts
  • Salt & freshly ground pepper to taste
  • 3 cups basil leaves
  • 1/2 good quality extra virgin olive oil
  • 3/4 cup freshly grated parmesan cheese
  • juice of one lemon

Direcciones

  1. In a food processor, blend garlic, walnuts, salt & pepper
  2. Process in basil leaves
  3. Drizzle in olive oil & process well until creamy & thick
  4. Add cheese & lemon juice
  5. Season with salt & pepper
