%20and%20lamb%20stuffed%20with%20bitter%20spring%20greens.%20On%20the%20positive%20side,%20I%20was%20able%20to%20bring%20some%20brightness%20to%20the%20menu%20thanks%20to%20my%20new%20foraging%20skills.%20Over%20the%20past%20few%20weeks%20I%E2%80%99ve%20gone%20a%20bit%20crazy%20with%20violets%E2%80%93jelly,%20syrup,%20candies%E2%80%93and%20I%20might%20have%20just%20one%20more%20recipe%20up%20my%20sleeve%20if%20I%20can%20find%20some%20more%20flowers%20this%20weekend.%20I%20figured%20what%20best%20to%20celebrate%20the%20awakening%20of%20spring%20than%20with%20some%20edible%20flowers?%3C/p%3E%3Cp%3EDessert%20might%20have%20been%20the%20highlight%20of%20the%20meal%20for%20me.%20Though%20in%20all%20fairness,%20it%20usually%20is.%20It%20was%20a%20birthday%20party,%20so%20a%20birthday%20cake%20was%20in%20order.%20Running%20behind%20as%20usual,%20I%20was%20in%20no%20position%20to%20test%20a%20new%20cake%20recipe,%20so%20I%20stuck%20with%20what%20I%20knew.%20A%20simple%20vanilla%20cake,%20infused%20with%20some%20lemon%20powder.%20To%20make%20the%20cake%20original%20and%20special,%20I%20spread%20violet%20jelly%20between%20the%20layers%20instead%20of%20extra%20icing%20and%20decorated%20it%20with%20some%20crunchy%20candied%20violets%20for%20texture%20and%20color.%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20cakes%20before%20in%20my%20life.%20Plenty%20of%20cakes.%20Though%20as%20I%20struggled%20to%20ice%20the%20two%20towers,%20spatula%20and%20hands%20covered%20with%20the%20sticky%20white%20frosting,%20I%20remembered%20who%20I%20made%20the%20shift%20to%20cupcakes.%20Two%20dozen%20mini%20cakes%20to%20ice?%20No%20problem!%20But%20putting%20that%20together%20in%20one%20massive%20project?%20Not%20so%20easy.%20It%20was%20only%20after%20I%20frosted%20my%20slightly%20lopsided%20project,%20struggling%20to%20keep%20the%20layers%20centered%20as%20they%20slid%20around%20on%20the%20jelly%20filling,%20that%20I%20remembered%20a%20tip%20for%20how%20to%20keep%20layers%20together.%20Get%20a%20few%20of%20those%20wooden%20skewers%20and%20stick%20them%20through%20the%20cake%20at%20various%20points%20(3-4%20should%20be%20plenty).%20The%20skewers%20will%20keep%20your%20cake%20together%20while%20you%20ice.%20When%20finished,%20simply%20remove%20the%20skewers%20and%20make%20sure%20to%20cover%20up%20the%20pinholes%20created%20by%20them%20on%20top.%3C/p%3E%3Cp%3EThe%20final%20product%20gave%20no%20indication%20to%20the%20stress%20I%20endured%20while%20making%20this%20seeming%20simple%20cake.%20The%20bright%20lemon%20flavor%20contrasted%20perfectly%20with%20the%20sweet%20floral%20jam,%20and%20the%20rich%20fluffy%20buttercream%20was%20sweet%20but%20not%20overly%20so.%20Hopefully%20next%20time%20I%E2%80%99ll%20remember%20my%20icing%20tip,%20or%20stick%20to%20what%20I%20know:%20cupcakes.%20Two%20dozen%20cupcakes,%20filled%20with%20violet%20jam,%20iced%20with%20a%20candied%20violet%20on%20each?%20How%20could%20you%20possibly%20go%20wrong?%3C/p%3E%3Cp%3EMAKE%20THE%20CAKE:%20Preheat%20oven%20to%20350%C2%B0%20F.%20Line%20two%209-inch%20cake%20pans%20with%20parchment%20paper%20and%20generously%20butter%20and%20flour%20both.%20Set%20aside.%20In%20a%20medium%20bowl,%20whisk%20cake%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%20In%20the%20bowl%20of%20an%20electric%20mixer,%20add%20eggs,%20one%20at%20a%20time,%20beating%20until%20blended.%20Add%20sugar%20and%20blend%20well.%20Add%203%20teaspoons%20of%20vanilla%20extract%20and%20oil%20and%20beat%20until%20mixture%20is%20well%20incorporated.%20Reduce%20speed%20to%20low%20and%20alternate%20adding%20flour%20mixture%20and%20buttermilk%20(half%20of%20each%20at%20a%20time).%20Beat%20until%20just%20combined.%20Scrap%20down%20sides%20of%20bowl%20and%20give%20it%20a%20few%20stirs%20with%20a%20spatula,%20to%20make%20sure%20the%20bottom%20of%20the%20bowl%20is%20well%20mixed%20as%20well.%20Divide%20batter%20between%20cake%20pans%20and%20bake%20on%20the%20middle%20shelf%20of%20the%20oven%20for%2020-25%20minutes,%20or%20until%20a%20toothpick%20inserted%20into%20the%20middle%20comes%20out%20clean.%20Cool%20layers%20for%2010%20minutes%20in%20pans,%20then%20remove%20from%20pans%20and%20let%20cool%20on%20a%20wire%20rack%20completely.%3C/p%3E%3Cp%3EMAKE%20THE%20ICING:%20While%20cake%20is%20baking/cooling,%20combine%20butter%20and%20cream%20cheese%20in%20the%20bowl%20of%20a%20stand%20mixer%20and%20mix%20on%20medium%20speed%20until%20glossy%20and%20fluffy,%20about%205-7%20minutes.%20Scrape%20seeds%20from%20vanilla%20beans%20and%20add%20to%20butter/cream%20cheese%20mixture.%20Beat%20additional%20minute.%20Add%20sugar,%20a%20few%20tablespoons%20at%20a%20time,%20until%20desired%20sweetness/consistency%20is%20reached.%20(For%20a%20light%20and%20airy%20icing,%20the%20trick%20is%20to%20beat%20icing%20longer%20than%20you%E2%80%99d%20think%20to).%20Add%201%20teaspoon%20vanilla%20extract%20and%20blend.%20Add%20additional%20sugar%20and%20blend%20if%20needed.%3C/p%3E%3Cp%3EASSEMBLE%20THE%20CAKE:%20Once%20layers%20have%20completely%20cooled,%20put%20bottom%20layer%20upside%20down%20on%20a%20plate.%20Spread%20top%20with%20violet%20jelly%20and%20cover%20with%20top%20layer%20(right%20side%20up).%20Insert%20skewers%20at%20various%20points%20around%20cake%20to%20prevent%20layers%20from%20sliding%20apart.%20Ice%20cake,%20remove%20skewers%20and%20cover%20up%20holes.%20Decorate%20cake%20with%20candied%20violets.%3C/p%3E%3Cp%3ENOTE:%20My%20icing%20is%20not%20super%20sweet%20and%20tend%20to%20be%20a%20bit%20thin.%20Add%20additional%20powdered%20sugar%20to%20thicken%20the%20icing%20or%20store%20cake%20in%20the%20refrigerator%20to%20prevent%20icing%20from%20%E2%80%9Cmelting%E2%80%9D.%20Remove%20cake%20from%20fridge%2030%20minutes%20before%20serving%20to%20allow%20to%20warm%20to%20room%20temperature.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
