Lentil Butter (Adas Careh)

Ingredientes

  • 1 c. uncooked lentils
  • 1/2 tsp. salt
  • 2 1/4 c. water
  • 1 Tbsp. extra virgin olive oil
  • 6 each green onions, sliced
  • 2 garlic cloves, chopped
  • 1/2 Tbsp. parsley
  • 1/4 tsp. cayenne
  • 1/4 tsp. turmeric
  • 1/4 c. c. water, as needed

Direcciones

  1. Combine water, lentils, salt in a pot. Cook till lentils are soft. Drain, reserve stock. Heat oil in skillet & saute/fry onions and garlic till onions are translucent/soft. Add in parsley and spices and cook another minute. Set aside.
  2. Combine lentils, cooking water & onion mix in a food processor, adding more water a Tbsp. at a time as needed till the mix reaches a spreadable consistency.
  3. Chill several hrs before serving.
  4. Serve spread on whole grain crackers or possibly as a vegetable dip.
